2 cups whole milk
1/2 cup canola oil
3/4 cup granulated sugar
1 package (2 1/4 teaspoons) active dry yeast
4 1/2 cups all-purpose flour, plus more for flouring
1/2 teaspoon (heaping) baking powder
1/2 teaspoon (scant) baking soda
2 teaspoons salt
1 teaspoon cinnamon
Additional spices, such as cardamom, nutmeg or allspice, optional
1/2 cup raisins
1 egg white
Splash of milk
1 egg white
Powdered sugar, as needed
Milk, as needed

Steps:

  • For the buns: Combine the milk, canola oil and 1/2 cup of the granulated sugar in a saucepan. Stir and heat until very warm but not boiling. Turn off the heat and allow to cool until the mixture is still warm but not hot, about 30 minutes.
  • Sprinkle the yeast over the mixture. Add 4 cups of the flour and stir to combine; the mixture will be very sticky. Cover with a towel and set aside for 1 hour.
  • Add the baking powder, baking soda, salt and remaining 1/2 cup flour to the dough. Stir until combined.
  • Combine the remaining 1/4 cup granulated sugar in a small bowl with the cinnamon and whatever other spices you want to use.
  • Lightly flour a work surface and turn out the dough onto it. Press to slightly flatten the dough. Sprinkle a third of the sugar/cinnamon mixture over it. Sprinkle on about a third of the raisins. Then fold the dough over on itself and flatten again so the dough is "plain" again. Repeat the sugar/raisin process, then fold the dough again. Repeat a third time.
  • Line a baking sheet with a silicone liner or parchment paper. Pinch off Ping-Pong- or golf ball-size bunches of dough. With floured hands, quickly roll them into balls, then turn the edges under themselves slightly. Place on the prepared baking sheet. Cover and allow to rise in a warm place for at least 30 minutes....an hour plus is better.
  • Preheat the oven to 400 degrees F.
  • For the glaze: Mix the egg white with a splash of milk. Brush onto the balls of dough.
  • Bake until the tops of the buns have turned nice and golden brown, 20 minutes give or take. Allow to cool on a cooling rack.
  • For the icing: Mix the egg white with enough powdered sugar for the icing to be very thick. Splash in the milk as needed for consistency.
  • When the buns are completely cool, add the icing to a small ziptop bag and snip the corner. Make icing crosses on each bun.

625g/1lb 6oz strong white flour, plus extra for dusting (see tip for alternatives)
1 tsp salt
2 tsp ground mixed spice (or a combination of ground spices such as cinnamom, allspice, nutmeg, cloves and ginger)
45g/1½oz unsalted butter, cubed, plus extra for greasing
85g/3oz caster sugar
1 unwaxed lemon, finely grated zest only (alternatively use finely grated zest of ½ orange or 1 tangerine/satsuma)
1½ tsp dried fast-action yeast
1 free-range egg
275ml/9½fl oz tepid milk (non-dairy milks are also suitable)
125g/4½oz dried mixed fruit of your choice
2 tbsp plain flour (see tip for alternatives)
1 tbsp golden syrup or runny honey, gently heated, for glazing (see tip for alternatives)

Steps:

  • For the buns, sieve the flour, salt and mixed spice into a large mixing bowl, then rub in the butter using your fingertips. Make a well in the centre of the mixture, then add the sugar, lemon zest and yeast. Beat the egg and add to the flour with the tepid milk. Mix together to a form a soft, pliable dough.
  • Turn out the dough onto a lightly floured work surface. Carefully work the mixed dried fruit into the dough until well combined. Knead lightly for 5 minutes, or until smooth and elastic.
  • Grease a large, warm mixing bowl with butter. Shape the dough into a ball and place into the prepared bowl, then cover with a clean teatowel and set aside in a warm place for 1 hour to prove.
  • Turn out the proved dough onto a lightly floured work surface and knock back the dough. Shape into a ball again and return to the bowl, then cover again with the teatowel and set aside for a further 30 minutes to rise.
  • Turn out the dough onto a lightly floured work surface and divide into 12 equal pieces. Roll each piece into a ball, then flatten slightly into a bun shape using the palms of your hands. Cover the buns again with the teatowel and set aside to rest for 5-10 minutes.
  • Grease a baking tray with butter and transfer the buns to the tray. Wrap the tray very loosely in baking paper, then place inside a large polythene bag (or cover loosely in lightly oiled cling film). Tie the end of the bag tightly so that no air can get in (if using) and set aside in a warm place for a further 40 minutes to rise. Preheat the oven to 240C/220C Fan/Gas 8.
  • Meanwhile, for the topping, mix the plain flour to a fairly thick smooth paste with 2 tablespoons cold water (you may need to use slightly less or more water to get the right consistency). When the buns have risen, remove the polythene bag and the greaseproof paper. Spoon the flour mixture into a piping bag (or a plastic food bag with a corner snipped away) and pipe a cross on each bun.
  • Transfer the buns to the oven and bake for 8-12 minutes, or until pale golden brown. As soon as you remove the buns from the oven, brush them with the hot golden syrup, then set aside to cool on a wire rack.

1 package active dry yeast
1 cup warm milk
5 tablespoons butter, softened
1/2 cup brown sugar
2 large eggs
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves

3 1/2 cups, approximately, all-purpose flour
3/4 cup dried currants
3 tablespoons milk mixed with 3 tablespoons granulated sugar
1 tablespoon cold milk (optional)
1 cup sifted confectioners' sugar (optional)
1/2 teaspoon lemon juice (optional)

Steps:

  • Mix the yeast with 4 tablespoons of the warm milk in a small bowl and set aside about 5 minutes.
  • Meanwhile, cream 4 tablespoons of the butter and brown sugar and beat in the eggs. When yeast mixture becomes frothy, stir it in, along with the spices, salt and remaining warm milk. Beat in the flour a cup at a time until a soft ball of dough can be gathered together. Dough can be mixed by machine if desired.
  • Place dough on a floured work surface and lightly knead in the currants, adding more flour as necessary to keep dough from sticking. Kneading should take no more than a few minutes.
  • Using some of the remaining butter, grease a bowl. Place the dough in the bowl and turn to butter all sides. Cover and set aside to rise until doubled, about 1 1/2 hours.
  • Butter two baking sheets with the remaining butter.
  • Punch the dough down, divide it in half, then divide each piece in half again. Divide each portion of dough into six equal pieces and shape each into a ball.
  • Place balls of dough on baking sheets, leaving about 2 inches between them. Set aside, covered lightly with waxed paper, to rise until they have doubled in size, 45 minutes to an hour.
  • Preheat oven to 400 degrees.
  • Carefully slash a cross into the top of each bun, using a very sharp razor blade and cutting through the skin of the dough at least one-quarter inch deep. Or snip a small cross in the top with sharp scissors. Try not to compress the bun as you cut.
  • Bake buns about 20 minutes, until they are lightly browned. Just before they come out of the oven, bring milk and sugar mixture to a boil. As soon as buns are done, brush them with milk and sugar glaze.
  • Allow the buns to cool for 30 minutes, then serve while still warm.
  • If desired, or if you have not cut the cross into the tops of the buns, the cross can be applied with icing. The buns must be completely cooled before the icing is applied. Mix the confectioners' sugar with the cold milk and lemon juice and, using the handle of a spoon or a chopstick, spread the icing to form a cross on top or to fill the cross-shaped cut.

¼ cup dried currants
¼ cup rum, or as needed to cover currants
¾ cup milk, warmed to 100 degrees F/40 degrees C
3 cups bread flour, divided, or as needed
1 (.25 ounce) package active dry yeast
5 tablespoons white sugar
1 large egg, beaten
1 tablespoon grated lemon zest
1 tablespoon grated orange zest
¾ teaspoon ground cinnamon
½ teaspoon fine salt
½ teaspoon ground cardamom
¼ teaspoon ground nutmeg
7 tablespoons melted butter
¼ cup water
⅓ cup all-purpose flour, or as needed to make thin, pipe-able dough
¼ cup sugar
3 tablespoons water

Steps:

  • Place currants in a small bowl. Heat rum until steaming in a small pan and pour over currants to soften them, about 2 hours. Drain; reserve liquid for another use.
  • Whisk warm milk, 1/4 cup flour, and yeast together in the bowl of a stand mixer. Let sit about 15 minutes to ensure yeast is active; small bubbles should start to rise to the surface. Add sugar, beaten egg, lemon and orange zest, cinnamon, salt, cardamom, nutmeg, melted butter, and most of the remaining flour (you might not need it all). Mix with a dough hook attachment until dough pulls away from the sides of the bowl and becomes slightly elastic, 5 or 6 minutes. Continue kneading until dough is soft and shiny, about 10 minutes. Remove dough from dough hook and shape into a ball. Transfer to a lightly floured work surface.
  • Flatten dough into a large oval about 1/2 inch thick. Sprinkle currants evenly over surface of dough. Fold dough into thirds. Turn and fold into thirds again. Reshape dough into a round ball. Transfer to lightly oiled mixing bowl. Cover and let rise in a relatively warm, draft-free place until double in size, about 2 hours.
  • Poke dough down a bit with your fingertips. Transfer to a lightly floured work surface. Flatten out dough into an even shape. Divide into 16 equal pieces using a bench scraper.
  • Line a baking sheet with a silicone mat.
  • Roll each piece of dough into a round ball. Arrange evenly on prepared baking sheet. Let rise 15 minutes.
  • Mix 1/4 cup water and 1/3 cup flour together in a mixing bowl until mixture is thick enough to hold its shape but thin enough to pipe. Transfer mixture to a piping bag.
  • After buns have risen 15 minutes, pipe a cross on top of each. Let rise until doubled from original dough balls, another 15 or 20 minutes.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Transfer pan to preheated oven. Bake until golden brown, about 15 minutes.
  • Combine 1/4 cup sugar and 3 tablespoons water in a pan over medium heat. Bring to a simmer and cook until sugar dissolves and mixture starts to thicken, or until it reaches a temperature of 225 degrees F. Remove from heat.
  • Let buns cool on a rack for 5 minutes before glazing. Brush glaze lightly over the tops of the buns.

1/2 cup water
1/2 cup warm milk
3/4 cup mashed potatoes
1/2 cup sugar
1 1/4 teaspoons salt

1 teaspoon ground cloves
1 1/2 cups raisins (or 1 1/2 cup mixed raisins and citron)
4 1/2 cups flour
1 egg yolk

1 tablespoon milk

Steps:

  • Combine yeast, water, and milk; stir well.

  • Brush with egg yolk and water.

  • While the buns are baking, combine milk, sugar, and vanilla to make icing.
  • When buns are cool, drizzle icing over cross.

1/2 cup whole milk
1/2 cup sugar
4 1/2 teaspoons active dry yeast (2 (1/4 ounce) packages)
1/3 cup unsalted butter, melted, plus as needed
1 large egg yolk
1 1/2 teaspoons pure vanilla extract
3 cups all-purpose flour (13 ounces)
3/4 teaspoon fine salt
1/2 teaspoon grated nutmeg

1/4 teaspoon ground ginger
1/2 cup currants, plumped in the microwave and cooled
1 egg beaten, for brushing
2 cups confectioners' sugar, sifted
2 tablespoons milk
1/4 teaspoon finely gated lemon zest

Steps:

  • Combine the water and milk in a medium saucepan and warm over low heat until about 100 degrees F (but no more than 110 degrees). Remove from heat and sprinkle the yeast and a pinch of sugar and flour over the surface of the liquid. Set aside without stirring, until foamy and rising up the sides of the pan, about 30 minutes.
  • Whisk the butter, egg yolk and vanilla into the yeast mixture.
  • Whisk the flour, the remaining sugar, salt, nutmeg, cinnamon and ginger in a large bowl. Make a well in the center of the flour and stir in the yeast mixture with a wooden spoon to make a thick, shaggy, and slightly sticky dough. Stir in currants.   • Brush the inside of a large bowl with butter. Put dough in bowl, turning to coat lightly with butter. Cover with plastic wrap. Let rise at room temperature until doubled in size, about 1 hour 30 minutes. (If you have a marker, trace a circle the size of the dough on the plastic, and note the time to help you keep track.)
  • To form the rolls: Butter a 9 by 14-inch baking pan. Turn the dough out of the bowl and pat into a rectangle about 16 by 8 inches. Divide the dough into 12 equal portions, about 2 ounces each, with a pizza wheel or bench scraper. (If you don't have a scale, divide the dough in half lengthwise, then in half crosswise. Cut each of those four sections into 3 equal-sized rolls.)
  • Tuck the edges of the dough under to make round rolls and place them seam-side down in the prepared pan, leaving a little space in between each roll. Cover the pan with buttered plastic wrap and set aside in a warm place until the rolls rise almost to the rim of the pan and have more than doubled in size, about 45 minutes.
  • Meanwhile, position a rack in the center of the oven and preheat to 375 degrees F.
  • Remove the plastic wrap and brush the tops of the buns with beaten egg. Bake rolls until golden brown and puffy, and an instant read thermometer inserted into the center of the rolls registers 190 degrees F, about 25 minutes.
  • For the glaze: Stir together confectioners' sugar, milk, lemon zest and vanilla until smooth. Transfer icing to a zip bag or pastry bag, and make a small cut in the corner of the bag. Ice buns in a thick cross shape over the top of the warm buns.
