1/4 cup granulated sugar
1 teaspoon whole allspice
2 cinnamon sticks
1 1-inch piece ginger peeled and thinly sliced
2 whole star anise (optional)
3/4 cup (or thereabouts) dark rum (bourbon or cognac may be substituted)

Steps:

  • Add cranberry juice, sugar, cinnamon sticks, allspice and ginger to a large saucepan and bring to a boil. Reduce to a simmer, stirring to dissolve sugar.
  • Cover and simmer on low for about 10 minutes. Reduce heat and keep warm until ready to serve.

6 -8 ounces boiling water

Steps:

1/2 cup sugar
1/4 cup lemon juice
2 cups water
3 slices lemon peel
3 inches cinnamon sticks
1 teaspoon whole cloves
1/3 cup rum or 1/3 cup orange juice
