CRAB LEGS WITH GARLIC BUTTER SAUCE

Crab Legs with Garlic Butter Sauce image

I ended up getting some snow crab legs on sale at the market. I wanted something a little different from plain steamed, boiled, or grilled crab legs, so I ended up throwing a few things together to make this awesome crab leg dish. Enjoy! This would be great with shrimp as well.

Yield Makes 4 sandwiches

Number Of Ingredients 9

1/2 cup (1 stick) unsalted butter, softened, divided
4 hot dog buns, preferably split top
1 teaspoon Old Bay seasoning
1 pound good-quality fresh crabmeat, picked over
1 tablespoon Worcestershire sauce
2 tablespoons fresh lemon juice
1/4 teaspoon kosher salt
1 tablespoon sliced chives
Lemon wedges (for serving)

Steps:

  • Heat a medium skillet over medium. Spread 2 Tbsp. butter on cut sides of each bun. Toast buns, cut side down, working in batches if necessary, until golden brown, about 2 minutes per batch. Set buns aside and wipe out skillet.
  • Melt remaining 6 Tbsp. butter in same skillet over medium heat. Continue to cook until butter foams, smells nutty, and turns caramel-colored, about 5 minutes. Add Old Bay seasoning, then gently fold in crabmeat and Worcestershire (mixture might spatter). Cook, stirring occasionally, until crabmeat is heated through, about 3 minutes. Remove from heat; stir in lemon juice and salt.
  • Using a slotted spoon, transfer crab mixture to buns and top with chives. Serve with lemon wedges alongside.

Tips:

  • Select the Right Crab: Choose live crabs that are heavy for their size and have bright, active eyes. Avoid crabs with missing limbs or cracked shells.
  • Prepare the Crabs: Rinse the crabs thoroughly under cold water and remove the rubber bands from their claws. If desired, you can also remove the shells from the crab bodies before cooking.
  • Use a Large Pot: Use a pot that is large enough to hold the crabs comfortably without overcrowding them. A stockpot or Dutch oven works well.
  • Season the Water: Add salt, Old Bay seasoning, and lemon juice to the water before boiling the crabs. This will help to flavor the crabs as they cook.
  • Boil the Crabs: Bring the water to a boil over high heat. Carefully add the crabs to the boiling water and cover the pot. Reduce the heat to medium-high and boil the crabs for 8-10 minutes per pound, or until they are bright red and cooked through.
  • Make the Hot Buttered Sauce: While the crabs are boiling, make the hot buttered sauce. Melt butter in a saucepan over medium heat. Add lemon juice, Worcestershire sauce, garlic powder, and cayenne pepper. Stir until well combined.
  • Serve the Crabs: Drain the crabs from the boiling water and transfer them to a serving platter. Serve with the hot buttered sauce and additional lemon wedges.
