ROASTED VEGETABLES WITH HORSERADISH DRESSING
I got this recipe from my sister, but have changed it to suit us. Great as a side dish for beef, lamb, or oven roasted salmon. Good vegan dish too. You can discard the garlic, or squeeze it over the vegetables as we do.

Tips:
- Use fresh horseradish root. Fresh horseradish root has a stronger flavor than prepared horseradish, and it will give your sauce a more authentic taste.
- Grate the horseradish root finely. This will help the horseradish blend more easily into the sauce and prevent it from becoming too chunky.
- Use a food processor or blender to make the sauce. This will help you achieve a smooth and creamy consistency.
- Adjust the amount of mayonnaise, sour cream, and vinegar to taste. The amount of each ingredient you use will depend on your personal preferences.
- Serve the sauce immediately or store it in the refrigerator for later use. The sauce will keep for up to 2 weeks in the refrigerator.
Conclusion:
Horseradish sauce is a versatile condiment that can be used to add flavor to a variety of dishes. It is especially good with roasted or grilled vegetables, but it can also be used as a dip for vegetables or as a spread for sandwiches. If you are looking for a spicy and flavorful sauce to add to your next meal, horseradish sauce is a great option.
