HORSERADISH CARROTS

Provided by Laura Hines

Categories     Vegetables

Number Of Ingredients 7

6 large carrots, peeled and sliced
2 Tbsp grated onion
1 Tbsp horseradish
1/2 c mayonnaise
1/4 c water
1/4 c salt and pepper to taste
1 c buttered bread crumbs

Steps:

  • 1. Cook carrots until tender.
  • 2. Mix other ingredients (except for bread crumbs).
  • 3. Place carrots in baking dish, pour mixture over and sprinkle bread crumbs on top.
  • 4. Bake 25 minutes at 350.

Tips:

  • For the best flavor, use fresh horseradish root. Look for roots that are firm and free of blemishes.
  • To peel the horseradish root, use a sharp knife or vegetable peeler. Be careful not to cut yourself, as the horseradish can be quite spicy.
  • Grate the horseradish root using a fine grater. You can also use a food processor, but be sure to pulse it only until the horseradish is finely chopped.
  • Add the grated horseradish to the carrots immediately after grating. This will prevent the horseradish from losing its flavor.
  • If you don't have fresh horseradish root, you can use prepared horseradish sauce. However, be sure to use a high-quality brand, as some prepared horseradish sauces can be quite bland.
  • Serve the horseradish carrots immediately, or store them in the refrigerator for up to 3 days.

Conclusion:

Horseradish carrots are a delicious and easy-to-make side dish that can be enjoyed year-round. They are perfect for potlucks, picnics, and holiday gatherings. With their sweet and spicy flavor, they are sure to please everyone at the table.
