A cousin in North Carolina gave me the recipe for these delicious honey-glazed rolls. Using my bread machine to make the dough saves me about 2 hours compared to the traditional method. - Mix milk, yoghurt, honey and butter in a small mixing bowl, heat in microwave 1 minute. Stir until the butter is melted.
- Place ingredients into bread machine according to manufacturers directions.
- Select dough cycle.
- When cycle is complete, shape dough into 18 equal rolls.
- Place in lightly greased pans. I like to use pie pans instead of a baking sheet.
- Cover rolls with a damp cloth and let rise about 30-40 minutes or until doubled in size. When using whole wheat flour, I like to set the pans on an electric heating pad set on medium.

- Combine 2 cups flour and yeast in a large mixer bowl. Heat milk, honey, margarine and salt just until warm (115 to 120°F) and margarine is almost melted, stirring constantly. Add to flour mixture; add eggs.
- Beat at low speed of electric mixer for 30 seconds; scrape sides of bowl constantly. Beat for 3 minutes at high speed. Stir in as much remaining flour as you can mix in with a spoon.
- Turn dough out onto lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 mins). Shape into a ball. Place dough in a greased bowl, then turn it once. Cover dough and let rise in a warm place till double (about 1 hour). Punch dough down; divide in half. Cover again; let rest 10 minutes.
- Cut each dough half into 18 equal pieces. Roll into balls, and place in greased 2 1/2-inch muffin pans. Let rise until doubled (about 30 mins).
- Bake in a 375°F oven for 12 to 15 minutes. Remove from pan. Cool on a wire rack.

- In a large bowl combine cabbage and carrots; mix well.
- Add chicken; mix well.

APPLE BUTTER ROLLS WITH HONEY MARZIPAN FROSTING

- For the rolls: Combine the milk, yeast and 1 teaspoon sugar in a bowl and swirl together. Let sit until foamy on top, about 5 minutes.
- Combine the cinnamon, salt, cardamom and 3 1/2 cups flour in a large bowl or the bowl of a stand mixer fitted with the dough hook. Whisk together the eggs, oil, honey and vanilla in a medium bowl. Stir the yeast mixture and oil mixture into the dry mixture and then knead, either on a work surface or with the dough hook, adding up to 1 cup more flour as needed, until the dough is smooth and slightly sticky, 15 minutes by hand and 7 to 10 minutes by mixer. Place in an oiled bowl, cover with plastic wrap and let rise until doubled in size, 1 1/2 to 2 hours.
- For the filling: Spray a 9-by-13-inch baking dish with cooking spray and set aside.
- Turn the dough out onto a clean surface and roll it out, dusting with flour as needed to prevent sticking, into an 18-by-12-inch rectangle. Spread it with the apple butter and sprinkle with the cinnamon and almond paste. Roll up tightly starting from a long end (so that it results in an 18-inch-long roll), and pinch the edges to seal. Cut into 12 rolls and place in the prepared baking dish. Cover with plastic wrap and refrigerate overnight. (Or cover loosely with plastic wrap and let rise at room temperature for 1 hour, then go right to preheating the oven.)
- When ready to bake, remove the rolls from the refrigerator and loosen the plastic wrap. Let sit at room temperature until puffy, 1 to 2 hours.
- Preheat the oven to 350 degrees F.
- Beat the egg with a splash of water in a cup. Remove the plastic wrap from the baking dish and brush the rolls with the egg wash. Bake until the rolls are lightly browned and have an internal temperature of 190 degrees F, 35 to 40 minutes.
- For the frosting: Meanwhile, blend the blanched almonds in a food processor, scraping the sides occasionally, until creamy and spreadable, 5 to 10 minutes. Add the honey, almond extract, salt and lemon zest and continue to blend (it may clump together at this point, and that's okay) as you drizzle in the milk. Blend until creamy. (This can be made the day before and stored in an airtight container in the fridge.)
- When the rolls come out of the oven, spread them with the frosting, sprinkle with the sliced almonds and serve.

Set the machine for the dough setting, start, and allow machine to complete cycle.
- Remove the bread pan with dough from the machine, and set pan into warm water (about 90 degrees F, 32 degrees C). Cover the top of the pan with a towel, and allow the bread to rise in the pan until doubled, about 1 hour.

- Preheat oven to 350 degrees F (175 degrees C).
- Spray the inside of the preheated oven with water, and immediately place rolls in oven. Bake until rolls are light golden brown, 15 to 20 minutes. For loaves, bake until browned and they sound hollow when tapped, 20 to 25 minutes.

- Combine dates, walnuts, 3 tablespoons honey, orange peel, and cardamom in processor. Blend until paste forms.
- Preheat oven to 375°F. Line rimmed baking sheet with parchment. If using 17 1/2x12 1/2-inch phyllo sheets, place stack of 8 phyllo sheets on work surface. Halve stack crosswise, forming 16 sheets, each 12 1/2x8 3/4 inches; arrange in 1 stack. Or if using 13 1/2x8 1/2-inch phyllo sheets, stack 16 sheets on work surface. Cover phyllo stack with plastic wrap, then damp kitchen towel. Remove 1 phyllo sheet from stack and place on work surface; brush with melted butter. Top with second sheet; brush with butter. Starting 1 inch from edge at short end of phyllo, spoon 3 tablespoons date mixture in dollops in row parallel to edge. Mold date mixture into log, leaving 1/2-inch border at edges of phyllo. Roll up date log in phyllo, enclosing filling and forming roll (filling will be exposed at ends). Transfer to baking sheet; brush with butter. Repeat with remaining phyllo, butter, and date mixture. Bake until golden, about 23 minutes. Cool on baking sheet.
- Spoon yogurt into small bowl (or 8 individual bowls); drizzle remaining 1/4 cup honey over yogurt. Place 1 phyllo roll on each of 8 plates. Serve with honey-yogurt for dipping.
HONEY BUNNIES (ROLLS)
These are very cute and very tasty little dinner rolls. They are sweeter than normal ones because of the honey, but make a good companion to food none the less. Perfect for Easter because of their cute bunny shapes! Just make sure that you plan ahead to make these because it takes times for them to rise and to shape them. i think they taste better warm and are more of a dense sweet bread good with coffee or tea

- In large bowl, combine 1/2 cups flour, undis-solved yeast, and salt.
- Heat evaporated milk, water, honey, and butter until warm (105° to 115°F).
- Gradually add to dry ingredients; beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally.
- Add eggs and 1/2 cup flour; beat 2 minutes at high speed.
- With spoon, stir in enough remaining flour to make soft dough. Might need a little extra.
- Place in greased bowl. Grease top; cover tightly with plastic wrap. Refrigerate for 2 to 24 hours.
- Remove dough from refrigerator; punch down. Remove to floured surface. Divide dough into 15 equal pieces. Roll each to 20-inch rope. Divide each rope into 1 (12-inch), 1 (5-inch), and 3 (1-inch) strips.
- Coil 12-inch strip to make body; coil 5-inch strip to make head. Attach head to body; pinch to seal. Shape remaining 3 strips into ears and tail and attach to body and head.
- Place on 2 large greased baking sheets. Cover; let rise in warm place until doubled in size, about 20 to 40 minutes.
- Bake at 375°F for 12 to 15 minutes. Remove from sheets to wire racks. Brush with Honey Glaze while warm. Insert raisins for eyes. If desired, brush again with glaze before serving.
- Honey Glaze: Combine 1/4 cup honey and 1/8 cup butter in a small saucepan. Cook over low heat until butter melts, stirring occasionally.

- Combine yeast and lukewarm water in the bowl of your stand mixer and let stand for 10 minutes (until yeast starts to foam and bubble). Add the milk, melted butter and sugar to the yeast mixture and give it a good stir (using the paddle attachment). Add 1 cup to 1 1/2 cups of flour to make a medium batter. (You're looking for a pancake-like consistency.) Next, add the egg and salt and incorporate well. Switch to the dough hook and with the mixer running on medium speed, add remaining flour. Continue mixing for 5 minutes or until dough is smooth. Sprinkle some flour onto the counter and place dough on top. NOTE: I have a silicone baking mat, and didn't find adding flour to be necessary. Let rest for 10 minutes. Meanwhile, grease another bowl with oil. Lift up the dough, and stretch it into a large ball, then place the dough inside. Cover with a clean kitchen towel and place in a warm place until dough has doubled in size, about 1 hour. Notes: If you don't own a stand mixer, I have a Danish Dough Hook that works great. Mix the dough to the pancake batter stage, then start kneading in the rest of the dough. Frankly, because I love to bake bread, I cannot imagine not owning a stand mixer! My oven was in use, so I covered the bowl with a shower cap (great trick) and set it on top of my stove. In one hour, my dough had doubled! Or, turn your oven on to WARM for 1 minute and turn it off. This will accelerate the proofing of the dough as well. Remove the dough, from the bowl, and punch dough down. Place dough on floured surface and roll out into a square about 1/2 inch thick. (You could do this by hand, but I got a more even rectangular shape.) Using a pizza cutter**, cut dough into desired shapes. Place dough squares onto a parchment-lined baking sheet (or two, depending on how many rolls you end up with). Note: I recently purchases a pizza blade, through Amazon. I absolutely love this tool, because it's perfect for cutting bar cookies or rolls. Cover with a towel and let rise again until doubled in size, about 45 to 60 minutes. (Mine was doubled in 30 minutes) Preheat oven to 350°F and bake for 10 to 15 minutes or until tops are golden brown. Remove from oven and immediately baste with melted butter. Serve dinner rolls warm with the cinnamon-honey butter. You will love it!
