BROILED HONEY-LIME SALMON

There are SO many ways to prepare salmon, and yet I'm always open to a new recipe. Salmon seems to be the most popular fish right now, so it's nice to have plenty of new ideas to change things up a bit. To keep this a guilt-free meal, serve with some steamed broccoli and brown rice.

4 (4 ounce) salmon fillets
1/4 teaspoon garlic pepper seasoning
1 tablespoon extra-virgin olive oil
2 tablespoons honey
1 teaspoon lime zest
2 tablespoons fresh lime juice
1 teaspoon low sodium soy sauce
1 tablespoon chopped fresh cilantro (optional)

Steps:

  • Preheat broiler to high. Line a rimmed baking sheet with foil and spray with nonstick cooking spray. Place fillets (skin-side down) on the baking sheet and sprinkle evenly with the garlic pepper. Place baking sheet under broiler and broil for 3 minutes.
  • Meanwhile, for the glaze, heat olive oil in a small saucepan over medium heat. Whisk in honey, lime zest, lime juice and soy sauce. Remove from heat and set aside.
  • Remove baking sheet from oven. Brush or spoon glaze evenly on the fillets. Return the baking sheet to the oven and broil for 4-7 minutes more or until the fish flakes easily with a fork. Remove from oven. Sprinkle salmon with cilantro (if desired) and serve.

2 large shallots
1 large clove garlic
Remaining jalapeno from salsa recipe
Juice of 1 lime
2 tablespoons honey
1 teaspoon olive oil
10 ounces salmon fillet (without skin)

Steps:

  • Mince shallots, garlic and from half to all of the remaining jalapeno. Combine in a small bowl with the lime juice and the honey.
  • Heat a small saute pan until very hot, and add the oil; reduce heat to medium-high, and saute salmon on one side for about 1 minute. Turn salmon, and add shallot mixture. Reduce heat to medium, and cook until done, following the Canadian rule: measure the salmon at the thickest part and cook 8 minutes to the inch. The salmon should be done in about 5 minutes.

1 medium red onion, chopped
2 large garlic cloves, chopped
1/2 to 1 teaspoon crushed red pepper flakes (medium heat to extra spicy)
1 teaspoon ground cumin (1/3 palmful)
Salt and freshly ground black pepper
Juice of 2 limes
3 tablespoons honey (3 gobs)
1 teaspoon chili powder (1/3 palmful)
4 6-ounce salmon fillets
1 red bell pepper, cored, seeded, and chopped
1 10-ounce box frozen corn kernels, defrosted
1/2 cup chicken stock or broth
1 15-ounce can black beans, rinsed and drained
2 to 3 tablespoons fresh cilantro leaves (a handful), chopped
6 cups baby spinach

Steps:

  • Preheat a medium skillet over medium heat with 2 tablespoons of the EVOO (twice around the pan). Add the onions, garlic, red pepper flakes, cumin, salt, and pepper. Cook, stirring occasionally, for 3 minutes.
  • While the onions are cooking, preheat a medium nonstick skillet over medium-high heat with the remaining 2 tablespoons of EVOO. In a shallow dish, combine the juice of 1 lime, honey, chili powder, salt, and pepper. Add the salmon fillets to the lime-honey mixture and toss to coat thoroughly. Add the seasoned salmon to the hot skillet and cook until just cooked through, about 3 to 4 minutes on each side.
  • To the cooked onions, add the bell peppers and corn kernels and cook for 1 minute. Add the chicken stock and continue to cook for another 2 minutes. Add the black beans and cook until the beans are just heated through. Remove the skillet from the heat and add the juice of the second lime, the cilantro, and spinach. Toss to wilt the spinach and then taste and adjust the seasoning. Serve the lime-and-honey-glazed salmon on top of the warm black bean and corn salad.

  • If fresh corn is in season, by all means cut the kernels from 4 fresh ears instead of using frozen.

3/4 cup sliced shallots (about 3 large)
1 1/2 cups basmati rice (9 to 10 ounces)
3 1/4 cups (or more) low-salt chicken broth
4 5-to 6-ounce skinless salmon fillets
1 bunch broccolini, bottom inch trimmed, stalks separated if necessary

Steps:

  • Preheat oven to 450°F. Whisk lime juice, lime peel, honey, 2 tablespoons cilantro, and soy sauce in small bowl; set aside. Heat oil in large deep ovenproof skillet or casserole (with lid) over medium-high heat. Add shallots and sauté until beginning to soften and brown, about 5 minutes. Stir in rice, then 3 1/4 cups broth; bring to boil. Cover skillet tightly with lid; place in oven and bake 10 minutes (rice will be almost cooked through and most of broth will be absorbed; mix in more broth by 1/4 cupfuls if dry).
