EASY PAVLOVA

Easy Pavlova image

In this elegant dessert, a crisp white meringue layer is filled with whipped cream and fresh fruit. To keep your meringue from being flat and grainy, try beating egg whites until stiff but not dry. Overbeaten egg whites lose volume and deflate when folded into other ingredients. Also, when beating in sugar, beat in about 1 tablespoon at a time, beating well between each addition. Then beat until meringue is thick, white and glossy. Be absolutely sure not a particle of grease or egg yolk gets into the whites.

Time 2h

Yield 8

Number Of Ingredients 7

4 egg whites
1 ¼ cups white sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice
2 teaspoons cornstarch
1 pint heavy cream
6 kiwi, peeled and sliced

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper. Draw a 9-inch circle on the parchment paper.
  • In a large bowl, beat egg whites until stiff but not dry. Gradually add in the sugar, about 1 tablespoon at a time, beating well after each addition. Beat until thick and glossy. Gently fold in vanilla extract, lemon juice, and cornstarch.
  • Spoon mixture inside the circle drawn on the parchment paper. Working from the center, spread mixture toward the outside edge, building edge slightly. This should leave a slight depression in the center.
  • Bake for 1 hour. Cool on a wire rack.
  • In a small bowl, beat heavy cream until stiff peaks form; set aside. Remove the paper, and place meringue on a flat serving plate. Fill the center of the meringue with whipped cream, and top with kiwifruit slices.

Tips:

  • Ensure your egg whites are at room temperature before whipping them, as this will help them reach their full volume.
  • Make sure your bowl and whisk are completely clean and free of any grease or residue, as this can prevent the egg whites from whipping properly.
  • Whip the egg whites gradually, starting at a low speed and increasing the speed as the whites start to foam.
  • Add the sugar in slowly, one tablespoon at a time, while continuing to whip the egg whites.
  • Continue whipping the egg whites until they are stiff and glossy, and hold peaks when you lift the whisk out of the bowl.
  • Fold in the vinegar and cornstarch gently until just combined, being careful not to overmix.
  • Spread the meringue mixture evenly onto the prepared baking sheet, creating a 9-inch circle.
  • Bake the meringue in a preheated oven at 300°F (150°C) for 1 hour and 15 minutes, or until the meringue is crisp on the outside and marshmallowy on the inside.
  • Turn off the oven and leave the meringue inside to cool completely.
  • Once the meringue is cool, top with whipped cream and fresh berries before serving.

Conclusion:

This honey-buttermilk pavlova is a delicious and impressive dessert that is perfect for any special occasion. The combination of the crisp meringue, creamy whipped cream, and fresh berries is sure to please everyone. With a little care and attention, you can easily make this stunning dessert at home.
