HONEY-APPLE TURKEY BREAST
I found this recipe in a diabetics' cookbook. We really like the honey flavor. The sweetness comes through when I use the leftovers in casseroles and soups, too.

Steps:
- Combine the hot water and the salt in a 54-quart cooler. Stir until the salt dissolves. Stir in the vegetable broth and the honey. Add the ice and stir. Place the turkey in the brine, breast side up, and cover with cooler lid.. Brine overnight, up to 12 hours.
- Remove the turkey from the brine and dry thoroughly. Rub the bird thoroughly with the vegetable oil.
- Heat the grill to 400 degrees F.
- Using a double thickness of heavy-duty aluminum foil, build a smoke bomb. Place a cup of hickory wood chips in the center of the foil and gather up the edges, making a small pouch. Leave the pouch open at the top. Set this directly on the charcoal or on the metal bar over the gas flame. Set the turkey over indirect heat, insert a probe thermometer into the thickest part of the breast meat, and set the alarm for 160 degrees F. Close the lid and cook for 1 hour.
- After 1 hour check the bird; if the skin is golden brown, cover with aluminum foil and continue cooking. Also, after 1 hour, replace wood chips with second cup.
- Once the bird reaches 160 degrees F, remove from grill, cover with aluminum foil, and allow to rest for 1 hour. Carve and serve.

Tips:
- Use a flavorful apple cider. A good apple cider will add a lot of flavor to your brine. Look for a cider that is made with fresh apples and has a good balance of sweetness and tartness.
- Add some spices to your brine. Spices like cinnamon, cloves, and nutmeg will add a warm and festive flavor to your turkey. You can also add some fresh herbs, such as thyme or rosemary.
- Brine your turkey for at least 12 hours. The longer you brine your turkey, the more flavor it will absorb. If you don't have time to brine your turkey for 12 hours, you can brine it for as little as 4 hours.
- Roast your turkey at a high temperature. This will help to create a crispy skin and juicy meat. Roast the turkey at 450 degrees Fahrenheit for 30 minutes, then reduce the temperature to 325 degrees Fahrenheit and continue to roast until the turkey is cooked through.
- Let your turkey rest before carving. This will help the juices to redistribute throughout the turkey, making it more tender and flavorful.
Conclusion:
Brining your turkey is a great way to ensure that it is moist and flavorful. This honey apple turkey brine is a delicious and easy way to brine your turkey. The combination of apple cider, honey, and spices will give your turkey a wonderful flavor that your family and friends will love.
