1 cup sour cream
1 6 ounce can diced green chilis
2 cups monterey jack cheese (shredded)
1/2 cup Parmesan Cheese (shredded)

Steps:

  • Preheat oven to 350 degrees. In a medium sized bowl combine hominy, sour cream, green chilis and Monterey Jack cheese. Spread evenly into a 2 quart casserole dish. Top with Parmesan Cheese.

1 medium onion, chopped
1 tablespoon canola oil
1 garlic clove, minced
1 cup sour cream
3/4 cup shredded cheddar cheese, divided
1/4 cup milk
1 can (4 ounces) chopped green chilies
1/4 teaspoon ground cumin
3 cans (15 ounces each) golden hominy, drained

Steps:

  • In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. 8 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
One 30-ounce can hominy, drained and rinsed
3/4 cup half-and-half
Hot sauce, to taste
1/2 cup grated Cheddar
1/2 cup grated Monterey Jack cheese
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. 1 can(s) white hominy, drained
1 lb lean ground beef
1/2 c onion, chopped
1/2 c bell pepper, chopped
1 3/4 c canned tomatoes
1/2 tsp salt
1/4 tsp black pepper
1 c cheese, grated

  • 1. Preheat oven to 350. Using a skillet brown beef and crumble beef. Add onion and pepper and cook until pepper is done . Drain off liquid. I use a colander for draining. Pour meat mixture back in skillet. Add tomatoes and hominy and mix. Pour into a sprayed casserole dish. Bake for 40 minutes. Remove casserole and sprinkle the cheese on the top. Return to oven to melt the cheese about 10 minutes.
  • 2. I have made this dish with cooked, crumbled hot sausage which makes it a little more spicy. My family like hot recipes so I have used hot Rotel Tomatoes.
