SLOW COOKER TURKEY AND CHORIZO CHILI
This is the turkey chili I made to compete on fooduel.blogspot.com. It's not overbearingly spicy, with good texture and flavor. To thicken this chili, you can add double the amount of chorizo and stew the tomato sauce before adding it to the slow cooker.

It attacks your taste buds! Spicy chorizo-style sausage and lean ground turkey combine to make a kick-butt burger that's full of taste but won't leave you feeling stuffed. This burger could also be grilled outdoors for a smokier flavor. Goes great with a michel ada or frozen margarita.

TURKEY CHORIZO
I was looking to make a lighter version of chorizo with a strong garlic flavor. The original recipe calls for ground pork and not having in I used turkey and made a few additional changes and the result was very good. The Ancho chile will not add alot of heat. It adds a nice rich flavor. The heat can be adjusted to your liking by increasing the red pepper flakes.

TURKEY CHORIZO (LOOSE, NOT ENCASED)
In college, I spent some summers in New Mexico, where I fell in love with authentic Mexican chorizo. But having become very health-conscious, my husband and I have been trying to replicate that chorizo flavor in extra lean ground turkey. This recipe tastes just like the pork chorizo from our favorite taco trucks. Serve in tacos, burritos, quesadillas, omelets, or breakfast burritos. I suggest serving on corn tortillas, with chopped onion and cilantro garnish, and a squeeze of lime.

Tips:
- Use a meat grinder with a medium-sized plate to grind the turkey meat. This will give the chorizo a coarse texture, similar to traditional Spanish chorizo.
- If you don't have a meat grinder, you can chop the turkey meat into small pieces by hand. Just make sure the pieces are evenly sized so that they cook evenly.
- Be sure to use a good quality paprika for the best flavor. Spanish paprika is a good choice, but you can also use Hungarian or smoked paprika.
- Don't be afraid to experiment with the spices. You can add more or less of any of the spices to taste. You can also add other spices, such as cumin, oregano, or fennel.
- Let the chorizo cure for at least 2 weeks before eating. This will allow the flavors to develop and mellow.
Conclusion:
Homemade turkey chorizo is a delicious and versatile sausage that can be used in a variety of dishes. It's a great way to use up leftover turkey, and it's also a healthier alternative to traditional pork chorizo. If you're looking for a new and exciting way to cook with turkey, give this recipe a try.
