2 teaspoons grated lemon zest

  • Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in lemon zest and extract. ½ cup vegetable oil
2 tablespoons lemon juice
1 teaspoon vanilla extract
1 egg, lightly beaten

¼ cup white sugar, or as needed
½ cup powdered sugar
1 tablespoon lemon juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

1 (3.4 ounce) package instant lemon pudding mix
1 teaspoon kosher salt
1 teaspoon baking powder
½ teaspoon baking soda
2 cups white sugar, divided
⅓ cup packed light brown sugar
2 teaspoons lemon zest
1 ½ cups unsalted butter, melted
2 large eggs
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract

Steps:

  • Whisk together flour, pudding mix, salt, baking powder, and baking soda in a large bowl; set aside.
  • Combine white sugar, brown sugar, and lemon zest in the bowl of a stand mixer fitted with the paddle attachment. 1 cup butter, softened
1 cup sugar plus extra for dipping
1 lemon
1 egg
1/2 teaspoon lemon extract
2 cups flour
1/2 teaspoon baking powder

Steps:

  • Preheat the oven to 375°F.
  • Place the butter and sugar in a large bowl and stir until combined. Remove the zest from the lemon by running it over the smallest openings on a grater. (Be careful not to grate the bitter white part of the lemon peel, known as the "pith.") Add the egg, lemon zest, and lemon extract to the bowl and stir well.
