  • Add the potatoes to a large pot of cool salted water. Bring the water to a boil and cook for 20-25 minutes, or until a fork can easily pierce a potato. Drain the potatoes and set aside until cool enough to handle but still warm.
  • Using a peeler or your fingers, remove the skin from the potatoes. In a medium bowl, mash the potatoes until all lumps are gone. Add the salt and pepper and mix well. 1-1/2 teaspoons salt, divided

3 quarts water
Spaghetti sauce, warmed

  • Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. These are truly the BEST gnocchi's ever. Every birthday we get to choose what we want for dinner and every year my mom would make these for me. They are very time consuming, but well worth the long prep time. Make them on a weekend and freeze them for later use. (Cook time includes the time it takes for the water to boil)

8 cups water
2/3 cup oil
2 (10 ounce) packages instant mashed potatoes
8 cups flour
1/2 cup grated cheese
8 slightly beaten egg yolks

Steps:

  • IN LARGE KETTLE, bring the water and oil to a boil.
  • Remove from burner and add the 2 boxes of instant potatoes (make it like you are making mashed potatoes).
  • Let it cool for about 4 hours.
  • In a large bowl combine the flour and grated cheese (mix well).
  • Add the slightly beaten egg yolks and cold mashed potato mixture.
  • Mix and knead and knead and knead& then knead some more (It will seem like it will never come together, but do not add anything else- just keep kneadin until it becomes nice and smooth) When nice and smooth, cut the dough into sections (don't make the pieces too big or too small) Roll out each piece into a rope (about 1" thick) (do not use any flour when you are making the ropes).
  • Cut the rope into 1" pieces or smaller.
  • Sprinkle flour over the little pieces.
  • Using a cheese grater that has been floured real good, roll each 1" inch piece with your finger to form your gnocchi.
  • (HINT: USE THE SMALL HOLE SIDE AND ROLL LIGHTLY WITH FINGER TO GET THE SHAPE. IF YOU PRESS DOWN TOO HARD, YOU WILL END UP POKING A HOLE THROUGH THE DOUGH. IF THAT HAPPENS, MUSH THE PIECE BACK TOGETHER AND ROLL AGAIN).
  • They will sorta look like a crocheted hat without a rim when you are done rolling them.
  • Flour your cookie trays and only put one layer of gnocchi's per tray.
  • You can freeze them at this point and when they are frozen, throw them all into a plastic bag and keep in the freezer until ready to use.
  • When ready to cook them, place them in boiling water.
  • When they float to the top of the pan, they are done.
  • Drain and put in big pasta bowl.
  • Pour your sauce (tomato or pesto) over the top and mix and serve.
  • This recipe will serve about 10 to 12 people.
  • You might want to cut it in half.

Kosher salt
1 large egg, beaten
1 1/4 to 1 1/2 cups all-purpose flour, plus more for forming the gnocchi
Grated Parmesan, for serving
Fresh basil, for serving

  • Put the potatoes in a large saucepan over medium heat with enough water to cover by an inch. Bring to a simmer and cook until tender all the way through when pierced with a knife, about 20 minutes. Drain.
  • When the potatoes are still hot but you are able to handle them, peel off the skins with a paring knife and press the warm potatoes through a ricer in a flat layer on a working surface. Let cool completely.
  • Once the potatoes are cool, sprinkle with 1 teaspoon kosher salt. Drizzle the beaten egg over the potatoes. Sprinkle with 1 cup of the flour and use your hands (or preferably a bench scraper, if you have one) to mix and knead the dough together. Add 1/4 to 1/2 cup more flour as needed until the dough holds together and is only slightly sticky. (A good way to tell if the dough is the right texture is to cut the dough ball in half--the interior should look like cookie dough peppered with small holes throughout.)
  • To form the gnocchi, break off a piece of dough and roll into a log about 3/4 inch thick, keeping your hands and counter well floured as you work. Cut crosswise into 3/4-inch segments. Give each piece a quick single roll between your palms to round them slightly. Roll each piece off the back of the floured tines of a fork, pressing with your thumb as you roll down to make a small indentation on one side and ridges from the fork on the other side. Place on a floured baking sheet.
  • Bring a pot of water to a boil and salt generously. Boil the gnocchi until cooked, 2 to 4 minutes. Drain and serve tossed in a sauce of your choosing. Garnish with Parmesan and basil.

8 teaspoons butter, clarified

  • Dump half of your flour onto your work surface. Dump your mashed potatoes onto the flour. Form a well in the potatoes and pour your egg in it. Add salt. Pour half the remaining flour (1/2 a cup) on top. Work the egg, salt and flour into the potatoes using either your hands or a pastry scraper. Once everything is roughly incorporated, gently knead the dough like you would pasta for a couple of minutes. Do not over knead. At this point you can incorporate the rest of the flour if you need it. If the dough is still too sticky to handle or roll out, you need more flour. Again, be careful not to add too much flour, or your gnocchi will be dense and tough. Divide your dough into workable pieces. Roll the dough out until it's around 3/4 " in diameter. Using your pastry cutter or a knife, cut the rope into lengths of 3/4″. Now you have to decide how you want to shape your gnocchi. By pressing it with your thumb, or rolling it on a fork. To get the classic ribs on the gnocchi, roll each piece down the tines of a fork. It's takes some practice, but you'll get the hang of it. You aren't just sliding it down the fork, you need to roll it down. Once you do it right the first time you'll yell, "ah HAH!". And then you'll run outside to drag someone in to show them. To make the thumbprint version, just poke your finger into the centre of the gnocchi. Both versions are fine. The reason you NEED to do one of these two methods is because it's the ridges and the indent that helps holds whatever sauce you're putting on them. If you're planning to freeze some gnocchi, lightly flour a baking sheet, place the gnocchi on it and freeze. Once frozen you can remove them from the pan and immediately put them in baggies or a widemouth mason jar. These then go back in the freezer. Work as quickly as possible so the gnocchi doesn't have a chance to thaw out at all (because then they'll stick to each other). To cook your gnocchi, drop them in salted, boiling water. They're done when they float. To make them even MORE delicious, pan fry them for a couple of minutes in butter and/or oil.
