- 1. In medium-sized bowl, whisk first 4 ingredients til well mixed.
- 2. Add sour cream in spoonfuls on top, add oil and mix til all is just moistened with a spoon. Switch to using your hands turning the dough to get all the last of the dry stuff on the bottom of the bowl. Knead 8 times on floured surface.
- 3. Roll thick to only about an 8" circle. Just a few passes with your (floured) rolling pin. Cut out 6 biscuits with a biscuit cutter or a floured glass. Get 2 more out of the last of the dough. (Bunch it back together, knead it just a bit, pat or roll it and cut.) Pitch any last little tidbit if any left. I place mine on my old round metal pizza pan covered with foil and sprayed with butter-flavored Pam. But a cookie sheet will work just fine.
- 4. Place little pats of butter on top, or spread it a little if the butter is VERY soft and doesn't deflate the biscuits while doing so. Bake in hot, preheated 425 oven for 12-15 minutes (ovens vary) or til golden brown on top. Remove from oven and butter tops again with other half of butter. Serve warm with more butter and homemade jam or honey. Makes 8 tall sour cream biscuits.

- Preheat the oven to 450 degrees F (230 degrees C).
- Divide 1/2 cup butter into 12 to 16 small chunks.
- Mix flour, baking powder, and salt together in a bowl. Mix in butter chunks using a pastry blender. Make a well in the middle of the mixture; pour in buttermilk. Mix until dough comes together.

- Cut the sweet potatoes into 1 1/2-inch slices. Place the potato slices in a medium saucepan, and cover with water. Bring to a boil, reduce to a simmer, and cook until potatoes are tender. Drain and mash well.
- In the detached bowl of an electric mixer, whisk yeast, 1/4 cup warm water (105 degrees), and a pinch of sugar. Set the mixture aside until foamy, about 6 minutes. Attach bowl to mixer fitted with the dough-hook attachment. On low speed, add mashed potatoes, milk, 1/2 cup melted butter, eggs, sugar, and salt. Slowly add flour to make a slightly sticky dough. Knead until smooth, about 2 minutes. Brush inside of a mixing bowl with butter. Place dough in bowl; cover with buttered plastic wrap. Set aside to rise until doubled in size, 1 1/2 to 2 hours.
- Line 3 large baking sheets with parchment. Using a floured rolling pin on a floured work surface, roll dough out to 3/4 inch thickness. Cut rounds of dough as close together as possible with a 2 1/4-inch round cookie cutter. Scraps can be re-rolled once. Place rounds 1 to 2 inches apart on prepared baking sheets. Brush the tops with the remaining butter; cover with plastic wrap. Set aside to rise until light and they do not spring back when pressed with a finger, about 30 minutes.
- Heat oven to 400 degrees. Bake until biscuits are golden brown, about 14 minutes. Cool on a wire rack for about 5 minutes before serving.

Now cut your butter into small cubes with your bench knife or straight edge knife and place into the bowl. - 1. Preheat oven to 450 degrees. Butter biscuit pan(s) and set aside. You will need a pan big enough to accomadate 20 biscuits. Combine the first 5 ingredients. Cut in the Crisco shortening till the mixture looks crumbly.
- 2. Add the eggs and milk and mix well. Then fold in the raisins and cinnamon just till they are distributed through the dough. Don't over mix.
- 3. Turn out onto a floured surface and knead a few times. It isn't necessary to knead a lot. Gently pat out the dough to 1" thickness. Cut out with a 2 1/2 inch biscuit cutter or just use a knife and cut dough into 2 to 2 1/2 inch squares. Place the biscuits, touching each other, in the pre-greased pan(s).
- 4. Melt the butter in a small glass bowl and using a pastry brush, liberally brush each biscuit top with the butter. If any is left just pour it over the top. Bake at 450 degrees for 22 to 25 minutes. When done remove from oven and let cool for about 10 minutes. Then using the pastry brush, brush the glaze liberally on top of each biscuit. Again, if any is left just pour it on top of the biscuits as you can't have too much glaze. These are great warmed up slightly in the microwave as leftovers. Enjoy.

- 2. Sift flour into mixing bowl. Add whipping cream and mix with fork until well blended.

Place the biscuits on a parchment paper lined cookie sheet to flash freeze or a greased cookie sheet to bake. Gather extra dough and re-roll it to the same thickness as before then cut more biscuits. Repeat until you use all the dough. Bake at 450° for 8-12 minutes until golden brown and flaky. FREEZING: Freeze on a parchment paper lined cookie sheet for an hour or two, just until the biscuits are solid then place in a freezer quality plastic bag. Label, date and add to your freezer inventory sheet. Use within 6 months. Frozen biscuits that can go right in the oven. THAWING AND REHEATING: Cooked biscuits can be thawed in the fridge or on the countertop. They can also be placed in the microwave for a few seconds or in the oven for a few minutes to reheat. Frozen biscuits that are uncooked can be baked from frozen or thawed in the fridge. Add about 50% cooking time for frozen items, thus at 450 they should take 12 minutes or so. Check them after 10 minutes but allow up to 15 minutes to bake.
