For dinner this week, make Giada De Laurentiis' famous Chicken Piccata recipe, a comforting Italian classic made with lemon, butter and capers.

Provided by Giada De Laurentiis

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 9

2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
All-purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped

Steps:

  • Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
  • In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.
  • Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

Tips:

  • Use high-quality chicken breasts: Boneless, skinless chicken breasts that are evenly sized will cook evenly and produce the best results.
  • Pound the chicken breasts to an even thickness: This will help them cook evenly and ensure that they are tender and juicy.
  • Dredge the chicken breasts in flour: This will help to create a crispy crust on the chicken.
  • Use unsalted butter and olive oil: This will help to prevent the chicken from becoming too greasy.
  • Cook the chicken over medium heat: This will help to prevent the chicken from burning and ensure that it is cooked through.
  • Add the lemon juice and capers towards the end of cooking: This will help to brighten the flavor of the dish and prevent the lemon juice from overpowering the other ingredients.
  • Serve immediately: Chicken piccata is best enjoyed hot out of the pan.

Conclusion:

Chicken piccata is a classic Italian dish that is easy to make and always a crowd-pleaser. With its crispy chicken, tangy lemon sauce, and briny capers, it's a flavorful and satisfying meal that is perfect for any occasion. Whether you're serving it for a special dinner or a casual weeknight meal, chicken piccata is sure to be a hit.
