HOLIDAY GUMDROP COOKIES

Making these cookies, I feel that I'm keeping my mother's Christmas spirit alive. They were her special treat each year at holiday time. They're also great for keeping kids busy. They can cut up the gumdrops and eat all the black ones that would turn the dough gray if you put them in the batter. -Letah Chilston, Riverton, Wyoming

Time 3h10m

Yield 36 cookies

Number Of Ingredients 13

1/2 cup unsalted butter
1/2 cup margarine
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups quick-cooking oatmeal
1 cup packaged sweetened coconut
1 cup pecans, chopped coarsely
1 cup gumdrop, cut into pieces

Steps:

  • Cream the butter, margarine and sugar together in a mixer.
  • Add vanilla, and the eggs one at a time until well blended.
  • Sift the flour, baking powder, baking soda and salt.
  • Add the sifted flour to the butter and egg mixture and mix well.
  • By hand, stir in the coconut flakes, chopped pecans, oatmeal and sliced gumdrops until just mixed.
  • Refrigerate the dough until it is well-chilled (at least 3 hours).
  • Note: This will help the cookies keep their shape.
  • Once the dough is chilled, pre-heat the oven to 350°.
  • Take about 1 heaping tablespoon of dough and roll into a ball.
  • Place on a greased or parchment lined cookie sheet about 6 inches apart.
  • Bake for about 10 minutes or until light brown.

Tips:

  • Use parchment paper: Line your baking sheets with parchment paper to prevent the cookies from sticking and for easy cleanup.
  • Chill the dough: Chilling the dough before baking helps the cookies hold their shape and prevents them from spreading too much.
  • Don't overmix the dough: Overmixing the dough can make the cookies tough. Mix the dough just until the ingredients are combined.
  • Bake the cookies at the right temperature: Bake the cookies at 350 degrees Fahrenheit for 10-12 minutes, or until the edges are just beginning to brown.
  • Let the cookies cool completely: Let the cookies cool completely on the baking sheet before transferring them to a wire rack. This will help them to set and prevent them from breaking.

Conclusion:

These holiday gumdrop cookies are a delicious and festive treat that is perfect for any holiday party or gathering. They are easy to make and can be decorated with your favorite holiday sprinkles. With their chewy texture and sweet and tangy flavor, these cookies are sure to be a hit with everyone who tries them. So gather your ingredients and get baking!
