Tips:

  • Use fresh cranberries for the best flavor. Frozen cranberries can also be used, but they should be thawed and drained before using.
  • Make sure the eggnog is at room temperature before using. This will help the cake to bake evenly.
  • Do not overmix the batter. Overmixing can result in a tough, dense cake.
  • Bake the cake until a toothpick inserted into the center comes out clean. Overbaking can dry out the cake.
  • Let the cake cool completely before frosting. This will help the frosting to set properly.
  • If you are short on time, you can use a store-bought eggnog cake mix. Just be sure to add some fresh cranberries to the batter for flavor.
  • Get creative with the decorations! Use cranberry sauce, whipped cream, or fresh cranberries to decorate the top of the cake.
