Yield 3 Cups

Number Of Ingredients 6

1 12-ounce package fresh or frozen cranberries
3/4 cup sugar
2/3 cup ruby Port
1 medium navel orange, unpeeled, chopped
1/4 cup chopped currants
1/3 cup chopped walnuts

Steps:

  • Combine cranberries, sugar and Port in heavy large saucepan. Bring mixture to boil over medium-high heat, stirring until sugar dissolves. Reduce heat to medium-low; add chopped orange and simmer until cranberries burst and mixture thickens slightly, about 15 minutes. Mix in dried currants. Cool cranberry conserve completely. Stir in chopped walnuts. (Cranberry conserve can be prepared 3 days ahead. Cover tightly and refrigerate.)

Tips:

  • Choose fresh, ripe cranberries. This will ensure that your conserve has the best flavor and texture.
  • Use a variety of spices. The spices in this recipe (cinnamon, cloves, nutmeg, and ginger) give it a warm and festive flavor. You can also experiment with other spices, such as cardamom, allspice, or mace. If you like your jelly to be spicy, feel free to add a dash of cayenne pepper.
  • Cook the conserve until it reaches the desired consistency. The conserve will thicken as it cooks, so be sure to stir it frequently and check the consistency regularly. You can also use a candy thermometer to measure the temperature of the preserve. It is ready when it reaches 220°F (104°C).
  • Let the conserve cool completely before storing it. This will help it to set and develop its full flavor. It is best to store it in a cool, dark place, such as a pantry or refrigerator.

Conclusion:

Cranberry conserve is a delicious and versatile condiment that can be enjoyed in many different ways. It is perfect for spreading on toast or crackers, using as a filling for pies and tarts, or stirring into yogurt or oatmeal. It also makes a great gift for friends and family during the holiday season.
