Steps:
- 1. Mix ingredients very well. Also add 1 tablespoon grated onion. I use my hands(best tool in the kitchen). Shape into three seperate logs and roll in the 2 cups of finely chopped pecans. Mixture will be very wet, but once it's rolled in the pecans, it becomes easier to handle. Wrap seperately in plastic wrap and refrigerate, preferably overnight. Serve with any cracker of your choice.
- 2. The men at my husbands workplace requested the logs be made with jalapeno peppers added. This is also very good, but remove the seeds and veins from the jalapenos before adding, unless you want it to be hot and spicy. I have to make a seperate batch for them because this is the way they like it...LOL

Steps:
- Grate and set aside the colby cheese in a large mixing bowl. Add the cream cheese, the Cumin and with gloved hands mix thoroughly. The cheeses soften during mixing but they will harden back up in the refrigerator. Divide the bowls contents into 4 even portions. Roll each portion into a log about the size of a quarter in diameter, and roll the log into the spicy chile powder. Wrap each log in wax paper or plastic wrap and store in the refrigerator for 24 hours if possible before slicing and serving with or without your favorite crackers.
Tips:
- Use a variety of cheeses to create a flavorful and visually appealing cheese log. A combination of hard and soft cheeses, as well as cheeses with different flavors, will create a more complex and interesting dish.
- Add mix-ins to your cheese log to give it a unique flavor and texture. Some popular mix-ins include nuts, dried fruits, herbs, and spices. You can also add a layer of spreadable cheese or chutney to the center of the log for an extra burst of flavor.
- Roll the cheese log in chopped nuts, herbs, or spices to give it a festive appearance. You can also use a rolling pin to create a textured design on the outside of the log.
- Serve the cheese log with crackers, bread, or vegetables. You can also slice the log and serve it as an appetizer or snack.
- If you are making the cheese log ahead of time, wrap it tightly in plastic wrap and refrigerate it for up to 3 days. When you are ready to serve, let the log come to room temperature for about 30 minutes before serving.
Conclusion:
Cheese logs are a delicious and versatile appetizer or snack that can be easily customized to your liking. With a variety of cheeses, mix-ins, and toppings to choose from, you can create a cheese log that is perfect for any occasion. So next time you are looking for a quick and easy appetizer, try making a cheese log. You and your guests will love it!
