CHRISTMAS CHEESE LOG

Provided by Laura

Number Of Ingredients 12

250 g cream cheese (room temperature)
200 g feta
2 tsp dijon mustard
2 tsp lemon juice
1 tsp lemon zest
1 tsp balsamic vinegar
1 clove garlic, crushed
1/2 cup dried cranberries
1/2 cup dried apricots (chopped finely)
3 TBSP chopped fresh herbs (I used parsley & chives)
Ground black pepper to taste (be generous)
3/4 cup pistachios/pecans to coat

Steps:

  • Pre-heat the oven to 180°C/350°F and place the nuts on a baking tray.
  • Bake for 8 minutes (keep a close eye on them around this time as they can burn quickly) and remove from the oven. Chop the nuts coarsley (or use a food processor) and set aside.
  • Using a stand or hand mixer (or a bowl and wooden spoon) combine the softened cream cheese and feta. Add all remaining ingredients except for the nuts and combine.
  • Cut a large piece of baking paper and place on the bench. Tip the cheese mixture onto the baking paper and form it into a log shape. Roll it up in the baking paper, shaping as you go, tuck in the ends of the paper and place in the fridge for 3 hours (or longer) to set.
  • Once the cheese log has set, remove from the fridge. Spread the chopped nuts on a rimmed baking tray, carefully unwrap the log and roll it in the chopped nuts until it is completely coated.
  • Serve on a platter with crackers and toasted bread or wrap tightly in gladwrap and store in the fridge for up to a few days until needed.

Number Of Ingredients 13

500g/ 1 lb cream cheese (, softened (Note 1))
1/3 cup sour cream ((Note 2))
1/2 tsp EACH thyme, oregano, basil, rosemary, black pepper (OR 1 tsp Italian Seasoning)
1 tsp EACH garlic powder, salt, red pepper/chilli flakes ((adjust to taste))
2 cup cheddar or other cheese (, freshly grated (Note 3))
280g / 9 oz roasted peppers (, drained and finely chopped)
180g / 6 oz salami (, finely chopped (Note 4))
3/4 cup green olives (, finely chopped)
1/3 cup green onion (, finely minced (3 - 4 stalks))
220g / 7 oz sun dried tomato strips with OIL (, roughly chopped)
1/4 cup parsley (, finely chopped (or chives))
Rosemary sprigs ((decoration))
Jatz or other crackers (, for serving)

Steps:

  • Spray a loaf pan with oil then line with cling wrap with overhang.
  • Mix Cheese Log ingredients together. Taste and adjust salt if needed (bear in mind saltiness of crackers you are serving with).

  • Cover with cling wrap overhang and refrigerate for 4 hours+ (up to 1 week).
  • Turn out onto platter, peel off cling wrap.
  • Top with sun dried tomato and pour over oil. Garnish with parsley and rosemary sprigs to give it a festive look.
  • Best to serve closer to room temp than fridge cold. Serve with crackers! Knives for smearing optional - it's soft enough to scoop with crackers.

HOLIDAY GOAT CHEESE LOG

Holiday Goat Cheese Log image

This started as a Christmas treat, but was so popular that it's now served at all special family gatherings. The idea came from a recipe in a Colonial Williamsburg cookbook, but I modified it to get rid of peppercorns and add fruit. Garnish with parsley sprigs and serve with crackers.

HOLIDAY CHEESE LOG

Holiday Cheese Log image

I got this recipe many years ago from a friend of mine. My family and friends start requesting these just before the holidays. Hope ya'll enjoy these as much as we do...:)

Provided by tarina wyatt

Categories     Cheese Appetizers

Time 30m

Number Of Ingredients 7

8 oz cream cheese
1 small can crushed pineapple, drained very well
1 tsp garlic powder
1/2 c finely chopped pecans
1/4 c minced bellpepper(i use red and green)
2 c finely chopped pecans to roll logs in.
1 Tbsp grated onion

Steps:

  • 1. Mix ingredients very well. Also add 1 tablespoon grated onion. I use my hands(best tool in the kitchen). Shape into three seperate logs and roll in the 2 cups of finely chopped pecans. Mixture will be very wet, but once it's rolled in the pecans, it becomes easier to handle. Wrap seperately in plastic wrap and refrigerate, preferably overnight. Serve with any cracker of your choice.
  • 2. The men at my husbands workplace requested the logs be made with jalapeno peppers added. This is also very good, but remove the seeds and veins from the jalapenos before adding, unless you want it to be hot and spicy. I have to make a seperate batch for them because this is the way they like it...LOL

Tips:

  • Choose the right cheese: A good cheese log starts with a good cheese. Look for a cheese that is firm enough to hold its shape, but not too hard to spread. Cream cheese, cheddar cheese, and goat cheese are all popular choices.
  • Add flavorings: Once you have chosen your cheese, you can start adding flavorings. Popular flavorings for cheese logs include herbs, spices, nuts, and fruits. Be creative and experiment with different flavor combinations to find one that you like.
  • Shape the cheese log: Once you have added your flavorings, it is time to shape the cheese log. You can do this by rolling the cheese into a log shape or by pressing it into a mold. If you are using a mold, be sure to grease it first so that the cheese does not stick.
  • Chill the cheese log: Once you have shaped the cheese log, chill it in the refrigerator for at least 30 minutes. This will help the cheese to hold its shape and make it easier to slice.
  • Serve the cheese log: When you are ready to serve the cheese log, slice it into rounds and arrange it on a platter. You can serve the cheese log with crackers, bread, or fruit.

Conclusion:

Cheese logs are a delicious and easy-to-make appetizer that is perfect for any occasion. They are also a great way to use up leftover cheese. With a little creativity, you can create a cheese log that is sure to impress your guests.
