HOLIDAY BANANA BREAD
Banana bread that's crisp on the top, moist in the middle, and with a special Yuletide twist. This recipe makes 3 loaves, so use a big bowl when you're mixing these ingredients. Also, pardon the metric, but it's cleaner this way. For those who don't use metric: 325 mg sugar = 1 5/8 cups + 1/4 teaspoon 210 mL liqueur = 1/2 cup + 1/3 cup + 2 1/2 teaspoons 115 mL syrup = 1/3 cup + 1/8 cup + 1 teaspoon These eliminate the need for additional liquid in the recipe. You may add chopped walnuts or chocolate chips if you wish, but I don't think they're necessary.

Steps:
- Grease and flour three loaf pans and preheat oven to 350 F (175 C).
- Cream together butter and sugar.
- Little by little, add in the liqueur and gingerbread syrup. When all the liquid is added, it should resemble mayonnaise.
- Add bananas, baking soda, baking powder and salt. Blend well.
- Taste the mixture at this point; you should be able to taste the banana and gingerbread syrup in equal measure. Adjust to taste ad libitum.
- Blend in eggs.
- Blend in flour.
- Add chopped nuts or chocolate chips, if you so choose.
- Pour into greased and floured pans.
- Bake all three pans at 350 for 55 minutes or until toothpick inserted in the center comes out clean.

Steps:
- 1. Wax paper line 2 loaf pans (2 1/2" x 3 5/6" x 7 1/2")Chop walnuts, cherries, also measure mini choco-chips. Soften oleo.
- 2. In Mixing bowl: cream oleo w/ sugar, add eggs and beat. Add bananas and vanilla and beat. to soured milk add a tsp of soda ( be sure to hold measuring cup over mixing bowl as milk and soda foam). Alternate half of milk and cup of flour- mix and repeat w/ milk and remaining flour. scrape down bowl and min again. Remove Beaters and fold in choco-chips, walnuts, and cherries. Divide batter in wax paper lined pans. Bake for 1 hour at 350 degrees. test w/ toothpick. Cool on rank for i5 minutes before removing wax paper.
- 3. When totally cooled, wrap and refridgerate. for special treat, slice and spread w/ cream cheese for finger sandwiches (Cut in half).

- 1. In a large bowl, cream margarine & sugar until light.
- 2. Beat in eggs and bananas. (Mixture will look curdled.)
- 3. In a small bowl, combine remaining ingredients. Stir into banana mixture just to blend - do not overmix.
- 4. Pour batter into a greased 9" x 5" x 3" loaf pan or (3) 5 1/2" x 3" x 2 1/4" loaf pans.
- 5. Bake in a 350 degree oven for 55 - 65 minutes for 9" x 5" x 3" or 35 - 45 minutes for smaller loaves or until tests done.
- 6. Cool 10 minutes in pan; remove from pan and cool completely on wire rack. May be sprinkled with powdered sugar before slicing.
Tips:
