3 bell peppers (red, yellow and/or orange), cut into large chunks
2 red onions, trimmed and cut into quarters
3 tbsp. olive oil
1 tsp. dried sage
1 tsp. kosher salt
Black pepper, to taste
12 Italian sausages
4 hoagie or sub rolls

Steps:

  • Preheat the oven to 425˚. Spread the peppers and onions on a baking sheet. Drizzle with the olive oil, sprinkle with the sage, salt and some pepper and toss, breaking up the onions a bit as you do.
  • Put the sausages in and around the vegetables on the baking sheet.
  • Bake until the sausages are cooked through and the vegetables are tender, 30 to 35 minutes.
  • Slice the sausages and serve on rolls with the roasted vegetables.

2 (8 count) packages crescent rolls (I used butter flavored)
3 eggs
3 tablespoons parmesan cheese
12 ounces roasted red peppers (drained)
1/4 lb ham (lunch meat)
1/4 lb hard salami
1/4 lb pepperoni (sandwich sized)
1/4 lb provolone cheese
1/4 lb swiss cheese

Steps:

  • Layer one can of crescent rolls in a 9x13" pan and pinch together the cuts.
  • Layer ham, provolone, drained red pepper, salami, swiss & pepperoni.
  • Mix eggs and parmesan together and pour half the mixture over pepperoni.
  • Layer one can of crescent rolls on top and pinch together the cuts.
  • Pour the remaining egg mixture over the top.
  • Bake for 50 minutes on 350° or until golden brown.

This make-ahead breakfast was created from my craving for an egg casserole- using my favorite hoagie ingredients (which is from Jac-n-Dos; if you live near my hometown:) I cut up my leftover hoagie and added cheese, onion and eggs; soak overnight and throw in the oven the next morning. It really is delicious!! You can double this and add peppers or mushrooms if you wish.

1 - 4 inch baked italian hoagie or sub
2 - eggs
2 - egg whites
1/8 cup(s) half and half, or milk
2 tablespoon(s) frozen diced onion-or more if you like
1/4 cup(s) italian cheese blend
1/2 - slice swiss cheese
- salt and pepper
MY FAVORITE HOAGIE CONSISTS OF:
1 - 8 in sesame loaf
- ham, salami, pizza cheese and pizza sauce
- **this hoagie is oven-baked to perfection**

Steps:

  • Get your hoagie and eat half of it:) Or if you prefer just use the Hoagie ingredients listed above in the mixture.
  • Roughly chop up the hoagie, remove most of the pizza sauce-but leave a little or as much as you like. place in a small oven safe baking dish; sprayed with Pam or buttered. Place the onions on top.
  • Mix the eggs, cheese and half and half (or milk) well. Pour over the bread mixture. Push the mixture down into the bread mixture to get it starting to soak up the eggs.
  • Cover and let sit overnight in the fridge. In the morning let it sit out for a bit at room temp, or microwave on 30% power for about 1 1/2 mins. (You can add more milk if its soaked up too much.)
  • Bake at 350 for about 20-30 min or until nicely puffed. Let sit for about 5-10 min before serving.

3 tablespoons olive oil
1/2 onion, diced
1 green bell pepper, cored, seeded and diced
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1 teaspoon Italian seasoning
Half a 32-ounce bag frozen store-bought meatballs, defrosted and sliced in half
One 32-ounce jar marinara sauce
Two 8-ounce bags Italian cheese blend
One 5-ounce bag garlic croutons, crushed

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray.
  • Heat the olive oil in a medium skillet over medium heat. Add the onion and green pepper, then sprinkle with salt and pepper and saute until tender, about 5 minutes. Add the garlic and Italian seasoning and cook for another 1 to 2 minutes. Remove from the heat and set aside.
  • In a large bowl, combine the meatballs, marinara sauce and cheese. Add the cooked onion and pepper mixture. Mix to combine, then transfer to the prepared baking dish. Top with the crushed croutons. Bake until the cheese is melted and bubbling, 30 to 35 minutes. (If the topping starts to get too brown, loosely cover with foil toward the end of the bake.)

2 (24 ounce) jars spaghetti sauce
40 Italian-style frozen meatballs
2 cups shredded mozzarella cheese
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat garlic bread with spread side up on a baking sheet in the preheated oven until warm and golden brown, 10 to 12 minutes. Set aside to cool.
  • Reduce oven temperature to 350 degrees F (175 degrees C).
  • Bring spaghetti sauce to a boil in a large pot. Place frozen meatballs into sauce. Reduce heat to low and simmer until meatballs are heated through, about 20 minutes.

2 (8 ounce) packages prepared pizza crust
1/4 lb salami, sliced
1/4 lb cooked ham, sliced
1/4 lb pepperoni, sliced
8 slices provolone cheese
8 slices mozzarella cheese
2 tablespoons grated parmesan cheese
1/2 cup Italian salad dressing
pizza sauce, for dipping (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Coat a 9x13 inch baking dish with cooking spray.
  • Cover bottom of baking dish with 1 package Pizza dough.
  • Layer with salami, ham, and pepperoni.
  • Cover meat with a layer of Provolone cheese and Mozzarella cheese.
  • Top with second package of pizza dough.
  • Brush with Italian salad dressing.
  • Bake, uncovered, in the preheated oven for 25 minutes.
  • Sprinkle with Parmesan cheese and bake 5- 10 more minutes.
