More Philly Stuff? You got it! Here's how to make a real Hoagie. The word Hoagie came from the sandwiches that used to get eaten by workers over on a place that was nicknamed "hog island" The workers there would bring crusty rolls with Italian meats and some olive oil and they became known as "hoggies" which eventually morphed into hoagie... Now that I've sounded like a Cliff Claven... the only other thing I have to say is don't make this with a soft roll! It has to be a GOOD crusty Italian Long Roll!

- Slice the rolls, but not all the way through.
- Place the vinegar and oregano in a small bowl. Slowly whisk in the oil until emulsified.
- Remove some of the bread from the center of each half of roll.(if desired)
- Drizzle a little of the olive oil mixture on the bread.
- Place first the meats, then the cheese in layers.
- Top with the tomatoes, onions, then the lettuce. Drizzle with more of the dressing, as desired.
SONNY'S STEAK HOAGIE

- For the hoagies:
- Preheat frying pan over medium-high heat. Cut the hoagie rolls horizontally to open up and make a pocket. Add the blended oil to the pan and stir in the onions. Put the steak on top of onions and add 1/2-ounce of the butter. Cover the pan for 2 1/2 minutes. The meat should have a cooked appearance on top and rare underneath. Using a fork and spatula separate steak from the onions. When the meat is cooked add the salt, remaining butter, and provolone. Cover to the pan to melt the cheese. Divide the steak mixture among the hoagie rolls and serve. If you like, you can add the optional ingredients to the steak mixture before serving.

- In a large bowl, dissolve yeast in 1/2 cup warm water. Add 1 tablespoon sugar; let stand for 5 minutes. Add the remaining warm water and sugar. Beat in the oil, salt and 4 cups flour until smooth. Here is my favorite Hoagie sandwich in dip form! I was so surprised to find this recipe on the Net. I wonder why I didn't think of this? I served this at a barbecue the other day and everyone raved about it. It's not a 'pretty' dip that's for sure.. but it is very good. Serve in a bowl surrounded by slices of Italian bread. Cook time is time to chill.

- Add the breadcrumbs, Parmesan cheese, oregano, paprika, garlic powder, salt and pepper to a Ziplock bag and shake to mix well.
- Pour into a low flat bowl or onto some waxed paper.
- Drop each chicken breast into the beaten egg and dredge in the breadcrumb, Parmesan cheese and herb mixture.
- Heat a few tablespoons of olive oil over medium high heat in a pan.
- Add the breaded chicken breasts, two at a time so as not to over-crowd the pan.
- Cook on medium high heat for about 3 minutes per side.
- Remove breasts to a paper towel-lined plate and fry the other two chicken breasts.
- Place the cooked chicken breasts on a baking dish and cover each breast with 1/4 cup tomato sauce.
- Sprinkle shredded mozzarella cheese over each one.
- Place in a 400-degree oven for 8 to 10 minutes or long enough to melt the cheese and get the tomato sauce nice and hot.
- I add the hoagie rolls to the oven when there is about 5 minutes left to get them nice and toasty and crusty.
- Slice the hoagie rolls, add the chicken Parmesan breast and top with sliced jalapenos, if desired.
- YUM!

- 1. Preheat oven to 350.
- 2. Mix butter and italian seasoning. Evenly spread butter on inside of hoagie rolls.
- 3. Layer one slice mozzarella, 3 slices folded salami, 2 slices folded ham,one more slice mozzarella. (this is where you could add more meat or the giardiniera mix to the sandwich)
- 4. Once the sandwiches are assembled, place them into a large baking dish. Make sure they are tightly pressed together, placing them sideways, with an open side facing up.

ROASTED VEGETABLE HOAGIE

- Preheat oven to 425 degrees. Slice bread and put aside. In large bowl combine eggplant, zucchini, squash, olive oil, salt, pepper, basil and garlic. Place vegetables on a baking sheet covered with foil and bake for 30 minutes. Place lettuce on bread and top with roasted vegetables. Add mozzarella and tomato. Drizzle vinegar over sandwich. Serve.
