1 can (6 ounces) light water-packed tuna, drained and flaked
2 tablespoons finely chopped red onion
1 teaspoon minced fresh parsley
1-1/2 teaspoons dill weed
1/8 teaspoon garlic salt
1/8 teaspoon dried thyme
1/8 teaspoon pepper
Pinch cayenne pepper
2 tablespoons fat-free mayonnaise
1 tablespoon reduced-fat sour cream
3 cups Boston lettuce leaves
6 grape tomatoes, sliced
Optional: sliced cucumber and fresh dill

Kosher salt and freshly ground black pepper
1/3 cup olive oil
2 tablespoons white wine vinegar
1 small shallot, minced
1 cup trimmed, chopped green beans
8 ounces dried farfalle
One 5-ounce can solid white tuna, preferably packed in olive oil, drained
1/2 cup torn fresh basil leaves
1/2 cup shredded carrots
1/4 cup thinly sliced celery
1/4 cup thinly sliced fresh chives
2 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Cook the green beans in the boiling water until crisp-tender, 3 to 4 minutes. Transfer the beans to a colander with a slotted spoon and run under cold water to stop the cooking process. Add them to the bowl with the dressing.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
  • Add the tuna, basil, carrots, celery, chives and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

1 6oz can(s) tuna/ packed in olive oil/ drained
1 1/2 tsp salt
1/2 lb penne pasta
2 Tbsp each: fresh lemon juice,extra virgin olive oil
1/2 tsp freshly ground black pepper
1/4 c each chopped fresh, flat leaf parsley,basil,cilantro
2 tsp capers, rinsed, drained

Steps:

  • 1. place tuna in a small bowl:break into flakes using fork. Set aside,Heat large pot filled with water to boil. Add penne and 1 teaspoon salt; cook until al dente, about 12 minutes. Drain; transfer to large serving bowl, add lemon juice,olive oil, remaining 1/2 teaspoon salt, and pepper; toss to coat.
  • 2. Add tuna, parsley,basil,cilantro and capers; mix gently. Taste and adjust seasoning. Cover; refrigerate to chill, about 1 hour.Serve at room temperature.

2 cups shredded carrots
3/4 cup chopped celery
1/2 cup sweet pickle relish
1/2 cup raw pumpkin seeds
1 cup reduced-fat mayonnaise or 1 cup vegan mayonnaise
2 tablespoons dried basil
1 tablespoon dried dill
1 tablespoon paprika

Steps:

  • Drain and flake the tuna into a large bowl.
  • Add the shredded carrots, chopped celery, sweet relish and seeds.
