BUTTERY HERBED DINNER ROLLS

Buttery Herbed Dinner Rolls image

Even if you use an electric mixer to make the dough, you'll have to shape the dough by hand-but it's one of the most fun jobs I can imagine, and it's easy too. Put one piece of dough on the work surface, cup your hand over it, and move it in a circular motion. Relax and enjoy-shaping a tender dough is one of life's natural stress relievers.

Time 6h5m

Yield 18 rolls

Number Of Ingredients 13

1 cup milk, warmed to about 110 degrees F
1 tablespoon active dry yeast
5 tablespoons unsalted butter, melted and cooled slightly, plus more for the bowl and pan
5 tablespoons unsalted butter, melted and cooled slightly, plus more for the bowl and pan
1 tablespoon sugar
1 1/2 teaspoons coarse salt
1 large egg, lightly beaten
3 cups all-purpose flour
2 tablespoons finely chopped fresh parsley
2 teaspoons finely chopped fresh thyme
1 teaspoon finely chopped fresh rosemary
4 tablespoons unsalted butter, melted
Flaky sea salt, for sprinkling

Steps:

  • Make the dough: In the bowl of a stand mixer fitted with the dough hook, combine the milk and yeast and let stand until foamy, about 10 minutes. With a fork, stir in the butter, sugar, salt and egg. With the mixer on low, add the flour and then the herbs. Increase the speed to medium and knead the dough until it is smooth and elastic, about 5 minutes.
  • Lightly butter a large bowl. Transfer the dough to the bowl, then cover and set in a warm place until doubled in size, 1 to 4 hours, depending on the temperature of your house.
  • Butter a 13-by-9-inch baking pan. Transfer the dough to a work surface and cut into 18 equal pieces. Roll each piece into a tight ball. Transfer the dough balls to the prepared pan, spacing them evenly (rolls will touch once they have risen). Cover and set in a warm place until doubled in size, about 1 hour.
  • Finish the rolls: Preheat the oven to 400 degrees F. Very gently brush the rolls with some melted butter and sprinkle with some flaky sea salt. Bake until golden, 15 to 18 minutes. Brush with more melted butter and serve warm.

HERBED CRESCENT ROLLS

These are easy to makefor a Thanksgiving meal.

Provided by sherry monfils

Categories     Biscuits

Time 25m

Number Of Ingredients 5

1 8 oz pkg refrigerated crescent rolls
3 Tbsp melted butter
1 tsp chopped frsh parsley
1 tsp chopped fresh rosemary
1 tsp minced garlic

Steps:

  • 1. Heat oven to 375. unroll dough, separate along perforations into 8 triangles.
  • 2. In bowl, combine remaining ingredients. Brush 1/2 the butter mix evenly over triangles.
  • 3. Beginning @ wide end of each triangle, roll up loosely, shaping into crescent. Spray a baking sheet w/ cooking spray. Place rolls on baking sheet. Bake for 10 min, or until golden brown. Remove from oven and brush w/ remaining butter mix.

Tips:

  • Activate the yeast properly: Before beginning the recipe, ensure your yeast is active by dissolving it in warm water with a pinch of sugar. Allow it to sit for 5-10 minutes until it becomes foamy. This ensures the yeast is alive and ready to leaven the dough.
  • Use the right kind of flour: This recipe calls for bread flour, which has a higher protein content than all-purpose flour. This results in a chewier, more flavorful roll. If you don't have bread flour, you can substitute all-purpose flour, but your rolls may be slightly less chewy.
  • Work the dough until it's smooth and elastic: Knead the dough for at least 10 minutes, or until it becomes smooth and elastic. This will help develop the gluten in the flour, which will give your rolls a chewy texture.
  • Let the dough rise in a warm place: Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for 1-2 hours, or until it has doubled in size. This will allow the yeast to work its magic and create light and airy rolls.
  • Bake the rolls until they're golden brown: Bake the rolls in a preheated oven at 375°F for 15-20 minutes, or until they're golden brown. Keep an eye on them so they don't overbake.

Conclusion:

These herbed rolls are a delicious and versatile addition to any meal. Whether you're serving them with soup, salad, or your favorite main course, they're sure to be a hit. With their soft and chewy texture, subtle herb flavor, and beautiful golden brown crust, these rolls are sure to impress your family and friends. So next time you're looking for a homemade bread recipe, give these herbed rolls a try. You won't be disappointed!
