1 cup fat-free milk
1/3 cup canola oil
1 cup shredded sharp cheddar cheese

  • Preheat oven to 350°. In a large bowl, whisk together first 6 ingredients. In another bowl, whisk together egg, milk and oil. 1 cup finely grated Parmesan
1 teaspoon dried oregano
1/4 teaspoon granulated garlic
1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
2 packages prepared biscuits (about 16 biscuits), each biscuit cut in half
1/2 cup extra-virgin olive oil

Steps:

  • Position a rack in the lower third of the oven and preheat to 350 degrees F. Spray a bundt or tube pan lightly with cooking spray.
  • Toss the Parmesan, oregano, garlic, rosemary and thyme in a small bowl until well mixed. Roll each biscuit half into a ball. Put 8 of the balls in a medium bowl and drizzle with 2 tablespoons of the oil, tossing until well coated. Transfer each ball to the Parmesan mixture to coat, then place in the prepared pan. Working in batches of 8, repeat with the remaining dough balls, overlapping in the pan as necessary.
  • Bake until the dough is puffed and browned, about 50 minutes; check halfway through the baking time and tent with foil if the bread is browning too quickly.
  • Let the bread cool 10 minutes. Loosen the bread from the sides of the pan with a thin spatula. Invert the pan onto a baking sheet, then flip the bread (decorative-side up) onto a serving plate.

2 c white wholewheat flour such as prairie gold
1 Tbsp sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
2 tsp celery seed
1 tsp dried parsley
1 tsp rubbed sage
1/2 tsp ground nutmeg
1 c buttermilk
or 1 oz lemon juice (2 t) and 7 oz milk (total 1 c), allow to sit a few minutes to coddle.
1 large egg
1/4 c olive oil

Steps:

  • 1. Heat the oven to 350°F. Grease a standard 9x5 loaf pan.
  • 2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a medium mixing bowl. In a separate bowl whisk the egg with the buttermilk and the oil.
  • 3. Pour the liquid ingredients over the dry ingredients. Gently stir and fold the ingredients until all the flour has been incorporated and a shaggy, wet batter is formed. Be careful not to over-mix.
  • 4. Scrape the batter into the prepared pan and pat it into the corners. Bake for 45-50 minutes. When finished, the loaf should be domed and golden, and a toothpick inserted into the center should come out clean. Let the loaf cool in the pan for 15 minutes before removing and slicing.
