Yield 8 servings

Number Of Ingredients 7

1/2 cup (1 stick) unsalted butter, room temperature
2 tablespoons finely chopped fresh tender herbs (such as cilantro, chives, and/or flat-leaf parsley)
1 1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Cayenne pepper
8 ears corn, shucked
1 tablespoon vegetable oil

Steps:

  • Prepare grill for medium-high heat. Mix butter, herbs, salt, pepper, and a pinch of cayenne pepper in a small bowl. Set herb butter aside.
  • Brush corn with oil and grill, turning often, until it is tender and charred in spots, 5-8 minutes.
  • Transfer corn to a large platter or bowl and spread with reserved herb butter, dividing evenly.
  • DO AHEAD: Herb butter can be made 1 day ahead. Cover and chill. Bring to room temperature before spreading over grilled ears of corn.

Tips:

  • Choose the right corn: Select corn that has tightly packed kernels and a bright green color. Avoid corn with dry or brown husks.
  • Remove the husks and silk: Peel back the husks and remove the silk from the corn. Be careful not to remove too many husks, as they help to keep the corn moist during cooking.
  • Make the herb butter: Combine softened butter, chopped herbs, salt, and pepper in a bowl. Mix until well blended.
  • Slather the corn with herb butter: Spread the herb butter evenly over the corncobs, making sure to get in between the kernels.
  • Cook the corn: Place the corncobs in a pot of boiling water and cook for 3-5 minutes, or until the corn is tender. You can also grill the corncobs over medium heat for 10-12 minutes, turning occasionally, until the corn is tender and slightly charred.
  • Serve immediately: Serve the corn on the cob hot, with additional herb butter if desired.

Conclusion:

Herb-buttered corn on the cob is a classic summer side dish that is easy to make and always a crowd-pleaser.
