1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
1 tablespoon minced fresh basil or 1 teaspoon dried basil
2 teaspoons minced fresh parsley
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
3 garlic cloves, minced, divided
1 broiler/fryer chicken (3 to 4 pounds)
1 fresh rosemary sprig
1 can (12 ounces) beer

Steps:

  • In a small bowl, combine the first seven ingredients; stir in half of the minced garlic. Rub mixture over outside and inside of chicken. 3 teaspoons kosher salt
4 teaspoons chopped fresh rosemary leaves

  • In a large skillet over medium-high heat, cook 2 chopped onions with 2 tablespoons butter and some salt and pepper until the onions soften, 5 to 10 minutes.
