APPLESAUCE CAKE

Applesauce Cake image

In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

Time 1h5m

Yield 8 to 10 servings

Number Of Ingredients 13

1/2 cup unsalted butter, room temperature
2 cups brown sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups flour
2 teaspoons baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
2 cups applesauce
1/2 cup raisins
1 cup chopped walnuts
Powdered sugar, optional

Steps:

  • Preheat oven to 350 degrees F.
  • In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
  • In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.

Tips:

  • For the best flavor, use a variety of apples, such as Granny Smith, Honeycrisp, and Pink Lady.
  • If you don't have fresh apples, you can use unsweetened applesauce.
  • Be sure to peel and core the apples before you grate them.
  • Grate the apples on the large holes of a box grater.
  • Don't overmix the batter. Overmixing can make the cake tough.
  • Bake the cake in a preheated oven. This will help the cake rise evenly.
  • Let the cake cool completely before frosting it.
  • If you don't have cream cheese frosting, you can use a simple glaze made with powdered sugar and milk.

Conclusion:

Applesauce cake is a delicious and easy-to-make cake that is perfect for any occasion. It's moist, flavorful, and has a tender crumb. The cream cheese frosting is the perfect complement to the applesauce cake. Whether you're making it for a special occasion or just for a weeknight dessert, applesauce cake is sure to be a hit.
