1 medium sweet yellow pepper, chopped
1 medium onion, chopped
2 teaspoons olive oil
1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
2 cups fresh baby spinach, coarsely chopped
1-1/2 cups water
1 can (8 ounces) tomato sauce
1 teaspoon dried oregano
1 teaspoon chili powder
1/2 teaspoon garlic salt
2 cups uncooked instant rice

Steps:

  • Cook sausage in a Dutch oven over medium heat until no longer pink; drain. Remove and keep warm. Saute the mushrooms, pepper and onion in oil in the same pan until tender., Return sausage to pan. 2 medium zucchini, halved and sliced
1 small onion, chopped
1/2 cup chopped green pepper
1 teaspoon dried oregano
1/2 teaspoon garlic salt or garlic powder
1 can (11-1/2 ounces) V8 juice
2/3 cup uncooked instant rice

Steps:

  • In a large skillet, cook the sausage until no longer pink; drain. Add the zucchini, onion, green pepper, oregano and garlic salt; cook and stir until onion is tender, about 5 minutes.
