Time 45m

Yield 12

Number Of Ingredients 11

2 ¼ cups rolled oats
2 ½ cups buttermilk
1 ½ cups all-purpose flour
¾ cup whole wheat flour
⅓ cup white sugar
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
¾ teaspoon salt
¾ teaspoon ground cinnamon
3 eggs
¾ cup milk, or more as needed

Steps:

  • Mix the rolled oats and buttermilk together in a large bowl; allow to soak 15 minutes.
  • Whisk the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt together in a separate large bowl.
  • Beat the eggs and milk together in a separate small bowl; mix into the soaked oats. Stir the flour mixture into the oat mixture. If the batter seems dry, add milk about 1 tablespoon at a time until the desired consistency is achieved.
  • Grease a skillet or griddle and place over medium heat. Ladle about 1/2 cup of batter per pancake onto your preheated cooking surface. Cook until the pancake is lightly golden brown, about 2 minutes, flip, and continue cooking to brown other side, another 1-2 minutes.

HEARTY OATMEAL PANCAKES

My family loves these healthier pancakes, especially when served with Spiced Apple Syrup. The oats give them a slightly chewy texture.

Provided by Sue Stone

Categories     Pancakes

Time 25m

Number Of Ingredients 11

1 c old fashioned oats
1 c whole wheat flour
1/4 c wheat germ
1/4 c nonfat powdered milk
1 tsp baking soda
1/4 tsp kosher salt
1/2 tsp cinnamon
1 Tbsp brown sugar
2 eggs
2 c buttermilk
1/4 c butter, melted and cooled

Steps:

  • 1. In a large bowl, whisk together oats, flour, wheat germ, powdered milk, baking soda, salt, cinnamon, and brown sugar.
  • 2. In a medium bowl, stir together, eggs, buttermilk, and melted butter.
  • 3. Stir wet ingredients into the dry ingredients until well blended.
  • 4. Lightly grease a griddle and heat until hot. Pour 1/2 cup of the batter onto the hot griddle (batter will be thick). Cook pancakes until the edges are dry and bubbles appear on the surface. Turn and cook other side.

Tips:

Omit brown sugar for a healthier option, and use a healthier cooking oil like coconut oil instead of vegetable oil. For a chewier pancake, let the batter rest for about 15-20 minutes before cooking. Add protein powder or a scoop of collagen for a boost of protein and an extra nutritional kick. To make the pancakes more kid-friendly, add chocolate chips, sprinkles, or fresh berries to the batter. For a vegan version, use plant-based milk and yogurt, and a flax egg instead of regular egg. Don't have maple syrup? Feel free to use coconut nectar, honey, or agave syrup as a substitute.

Conclusion:

Hearty Oatmeal Pancakes are easy to make and offer a delicious and nutritious start to your day. They are packed with whole grains, protein, and fiber, and can be customized to suit your dietary preferences and taste buds. Whether you like them fluffy or chewy, sweet or savory, these versatile pancakes will satisfy your cravings and keep you feeling full and energized throughout the morning.
