Time 1h30m

Yield 4-6 Bowls, 4-6 serving(s)

Number Of Ingredients 17

1 onion (medium sized, chopped)
1 celery rib (chopped)
2 large potatoes (or 3-4 medium potatoes, diced)
1 1/2 cups cauliflower (broken into bite sized flourets)
2 cups frozen corn
1/4 cup grated carrot
1/2 garlic clove (more or less to taste)
4 tablespoons butter (or margarine)
2 tablespoons cornstarch
1/2 cup chicken stock
1/2 cup milk
1 teaspoon salt
1/2 teaspoon black pepper (or more to taste)
2 teaspoons hot sauce (Crystal, Louisiana or Texas Pete(to taste)
1 cup shredded sharp cheddar cheese
1/2 cup green onion, sliced
4 -8 slices bacon, fried and crumbled

Steps:

  • CHOWDER:.
  • Begin by frying bacon and set aside for use as topping.
  • Use some of the bacon grease (enough to coat bottom of pan) to fry onion on medium heat until soft. 5-10 minutes depending how thick or finely you have chopped them.
  • Toss in the diced potatoes and half of the chicken stock (1/4 cup), cover pot with lid and cook until soft. Approximately 15 minutes, but could be more or less depending on diced size.
  • Reduce the heat to medium-low.
  • Mash some of the potatoes with a fork (I usually mash about half of them).
  • Push the mashed and the whole potatoes to one side of the pan and drop in the butter to melt. Using your fork, blend in the corn starch while slowing adding the remaining chicken stock to make a gravy -- keep stirring until thickened.
  • Raise heat to medium high. Slowly add the milk while stirring contents. Add salt, pepper and hot sauce. Continue gently stirring contents to prevent scorching.
  • Once the liquid begins to simmer, add corn, cauliflower, celery and carrot to pot and reduce the heat to low and cover.
  • Allow to simmer, for about 1 hour or until cauliflower is soft. Do stir contents about every 15 to 20 minutes to prevent sticking and/or scorching.
  • OPTIONAL:.
  • Serve topped with cheddar cheese, green onion and bacon crumbles. If you enjoy some heat (spiciness), try using Monterrey Jack cheese.

HEARTY CORN CHOWDER

Hearty Corn Chowder image

My family loves this! My middle son Ryan is the "picky eater" and he asks for me to make this. I serve this with corn bread. I was asked by Penzeys' Spices to share a recipe or two. This was one of the three that they featured in their September Spice Catalog. What an honor!!

Provided by Patti Rahilly- Jones

Categories     Chowders

Time 1h30m

Number Of Ingredients 16

3-4 red skinned potatoes, scrubbed and diced, keep skin on
2 red yams, peeled and diced
1/2 c chopped onion
2-3 medium carrots, thick shredded or small dice
1 stalk of celery, chopped
1 c water
1 can of chicken broth
1 clove of garlic, chopped
2 Tbsp chicken soup base, paste
1/2 tsp pepper, poultry seasoning and salt
2 cans of canned corn -or- 16 oz. pkg frozen yellow corn
2 cans of cream style corn
2 c 1/2 & 1/2
2 c chopped cooked ham -or- shredded cooked chicken breast
mrs dash, salt & pepper to taste
butter and flour, see below

Steps:

  • 1. Saute the onion, celery and garlic in the butter until clear. Add water & broth. Add potatoes, carrots and yams.
  • 2. Simmer 15-20 minutes. You may add more broth and soup base for added flavor. Add all ingredients and let cook through until potatoes are cooked and the soup is hot.
  • 3. If the soup is too thin, take 3 tbsp. of sotened butter and two tbsp. of flour. Make a paste and add to the soup mixtures, stirring as adding. It will thicken.
  • 4. We like it thick so oftentimes I add frozen mixed vegetables as well, maybe 1 cup. You may salt and pepper to taste. I add Mrs. Dash occasionally to add more flavor as needed. Soup is not a science, a lot of "dump and pour, little of this and that" methods. Add seasonings and thickeners as you wish.
  • 5. The red skins and red yams add lovely color, flavor and body to the soup. Serve with hot corn bread and a salad.

Tips:

  • Use fresh or frozen corn. Fresh corn on the cob is best, but frozen corn is a good option if fresh corn is not available. If using frozen corn, thaw it before using.
  • Don't overcook the vegetables. The vegetables should be tender but still have a little bit of crunch. Overcooked vegetables will become mushy.
  • Use a good quality chicken stock. The chicken stock is the base of the chowder, so it's important to use a good quality stock. You can use homemade chicken stock, or you can use a store-bought stock.
  • Don't be afraid to experiment. You can add different vegetables, herbs, and spices to the chowder to create your own unique flavor. Some popular additions include diced red bell pepper, chopped green chilies, and a bay leaf.

Conclusion:

Corn chowder is a hearty and delicious soup that is perfect for a cold day. It's easy to make and can be tailored to your own taste. With a few simple tips, you can make a corn chowder that will impress your family and friends. So next time you're looking for a warm and comforting soup, give corn chowder a try.
