1/4 cup whole wheat flour (can sub all purpose flour)
1 teaspoon baking soda
1 teaspoon ground cinnamon
pinch salt (about 1/8 teaspoon)
1/3 cup chocolate chips (I used mini!)
2 eggs
1 cup nut butter (I used almond butter. Peanut butter or cashew butter would be fab.)
1/2 cup pure maple syrup
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350° F. Prepare your pan. Spray an 8×8 pan with cooking spray or line with parchment paper. I like to do both!
  • In a medium bowl, mix together the dry ingredients. Oats, flour, baking soda, cinnamon, slat, and chocolate chips. Set aside.
  • In a separate large bowl, mix together the wet ingredients. Eggs, nut butter, maple syrup, and vanilla. Mix with a spoon, rubber spatula, or fork until the ingredients are well blended.
  • Slowly add the dry ingredients to the wet ingredient bowl, mixing until combined. Pour dough into the prepared baking dish and spread evenly.

3 cups sweet potatoes (4-5 whole)
1 cup whole wheat flour
1 cup oatmeal
1/4 cup sugar
1/2 teaspoon cinnamon
1/2 cup oil
2 egg yolks
1/2 teaspoon vanilla
1 cup sugar
1/4 cup molasses
1 tablespoon pumpkin pie spice
2/3 cup low-fat milk
2 egg whites
2 eggs

Steps:

  • Put sweet potatoes in a microwave safe dish and add some water to the bottom. Cover with saran wrap.
  • Microwave on high for about 7 minutes or until knife inserts easily. Let cool.
  • Preheat oven to 350 degrees.
  • Put dry ingredients in food processor and pulse until oatmeal is ground.

1 (18 ounce) box yellow cake mix
8 tablespoons of melted butter
1 egg
2 1/2 cups peeled mashed sweet potato
8 ounces cream cheese, softened
4 tablespoons of softened butter
2 cups confectioners' sugar

2 teaspoons ground cinnamon
