Time 20m

Number Of Ingredients 13

1 1/4 cups quick oats
1 cup white whole wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon kosher salt
1/4 cup unsweetened applesauce
4 tablespoons unsalted butter (melted and cooled)
1 large egg
1 teaspoon pure vanilla extract
1/2 cup honey
1/3 cup dark chocolate chips
1/4 cup raisins
1/4 cup well chopped raw walnuts or pecans

Steps:

  • In a large bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
  • In a medium bowl, combine the applesauce, butter, egg, vanilla, and honey. Whisk until blended. Pour the liquid mixture into the flour mixture and stir just until combined. The dough will be wet and sticky. Fold in the chocolate chips, raisins, and walnuts. Place in the refrigerator and let chill for at least 30 minutes or up to 3 days.
  • When ready to bake, place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper or a silicone baking sheet. Remove the dough from the refrigerator (if it is very stiff, you may need to let it sit out for 5 to 10 minutes). With a cookie scoop or spoon, drop the dough into 1 1/2-inch balls and arrange on the baking sheet, leaving 1 inch of space around each. With your fingers, gently flatten each cookie to be about 3/4-inch thick.
  • Bake until the cookies are golden and firm around the edges and set on top, about 9 to 10 minutes. Place the baking sheet on a wire rack and let the cookies cool on the baking sheet for 2 minutes, then transfer the cookies to the rack to cool completely.

HEALTHY OATMEAL RAISIN COOKIES WITH HONEY

Healthy Oatmeal Raisin Cookies With Honey image

These little cookies are almost too healthy to even call a cookie! More like a nutritional supplement!!!

Provided by carlyandlee

Categories     Dessert

Time 40m

Yield 30 cookies, 30 serving(s)

Number Of Ingredients 14

1 cup whole wheat flour
1 1/2 cups rolled oats
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon (or more as desired)
1/2 teaspoon nutmeg (optional)
1/2 cup honey
1/2 cup oil (corn, grapeseed or olive)
1 tablespoon molasses
1 egg (beat with 1 Tbsp Water)
1 teaspoon vanilla
1/2 cup raisins
1/2 cup walnuts

Steps:

  • 1.In a large bowl, mix all the dry ingredients together.
  • 2.In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
  • 3.Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.
  • 4.COOL the mix for 20 minutes in the fridge.
  • 5.Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).
  • 6.Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.
  • 7.Bake for about 15 - 20 minutes or until golden on the bottom of the cookie. The cookies freeze very well and make a great snack! Enjoy.

Tips:

  • Use ripe bananas: Overripe bananas are sweeter and have a more intense flavor, which will make your cookies more delicious. If you don't have any ripe bananas on hand, you can ripen them quickly by placing them in a paper bag with a ripe apple or pear.
  • Don't overmix the dough: Overmixing the dough will make your cookies tough. Mix just until the ingredients are combined.
  • Chill the dough: Chilling the dough before baking will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at a high temperature: Baking the cookies at a high temperature will help them develop a crispy exterior and a chewy interior.
  • Let the cookies cool completely: Let the cookies cool completely before storing them. This will help them keep their shape and prevent them from becoming too soft.

Conclusion:

These healthy oatmeal cookies with honey are a delicious and nutritious snack that are perfect for breakfast, lunch, or a quick snack. They are easy to make and can be customized to your liking. With a few simple ingredients, you can create a batch of cookies that are sure to please everyone. So next time you're looking for a healthy and satisfying snack, give these oatmeal cookies a try!
