This recipe was really yummy to start with but I was looking for something a little healthier so I replaced some butter with non-fat yogurt and I eliminated the salt. It is super moist and tastes great.

1 teaspoon baking soda
¼ teaspoon salt
¼ cup butter
⅛ cup nonfat plain yogurt
¾ cup brown sugar
2 eggs, beaten
2 ⅓ cups mashed overripe bananas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Combine flour, baking soda, and salt in a large bowl. Beat butter, yogurt, and brown sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add room-temperature eggs one at a time, allowing each egg to blend into butter mixture before adding the next. Stir in mashed bananas until well blended. Pour banana mixture to flour mixture; stir just to moisten. Transfer batter into prepared loaf pan.

This is an adaptation of Sour Cream Banana Bread which I posted, then found out it was a duplicate. The difference is you use yogurt instead of sour cream. You may use plain, or be adventurous and try vanilla, lemon, or your choice of flavors! Or go ahead and use sour cream if you wish. I even used part mayonnaise once in a pinch. For the nuts, use whatever nuts you wish. So here is the recipe,I hope you enjoy! I used to make this for the Colonial Pines Inn in Highlands, NC. It was always well received, and the customers could buy a loaf to take home, which they frequently did!

1 cup sugar
2 eggs
1/2 cup margarine (you may substitute half applesauce to make it healthier!) or 1/2 cup butter (you may substitute half applesauce to make it healthier!)
1 1/2 teaspoons vanilla
1/2 cup plain yogurt or 1/2 cup sour cream
3/4 cup white flour (or try oat flour)
3/4 cup whole wheat flour (or use all white flour if you wish)
1 tablespoon wheat germ (optional)
1 tablespoon wheat bran or 1 tablespoon oat bran
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe banana (about 2-3)
1/2 cup chopped walnuts (optional)

Steps:

  • Grease one 5x9-inch loaf pan, or use 3 mini loaf pans. Some people even double the recipe and bake it in a bundt pan. Spray with cooking spray to coat pans.
  • Cream margarine, sugar, eggs and vanilla.

This version cuts down some of the fat intake and still remains as delish as the original recipe. Gotta try it! Make sure you bake this in TWO 8X4 loaf pans. If you try and put it into one 10x4 loaf pan it will be way too much batter and will not cook through properly!

1 1/4 cups pecans, divided
1/4 cup butter, softened
1 (8 ounce) package reduced-fat cream cheese, softened
1 cup sugar
2 large eggs

1/2 teaspoon baking soda

1 cup buttermilk
1 1/2 cups mashed very riped bananas (about 4 medium sized)

  • Preheat oven to 350°F Place 3/4 cup pecans in a single layer on a baking sheet and bake 12-15 minutes or until toasted and fragrant, stirring after 6 minutes.
  • Beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until fluffy and light. Add eggs, one at a time, beating just until blended after each addition.
  • Combine flours and next 4 ingredients; gradually add to butter mixture alternately with buttermilk, beginning and ending with the flour mixture.

  • Spoon batter into 2 greased and floured 8x4 inch pans. Sprinkle with remaining 1/2 cup pecans.
  • Bake at 350°F for one hour or until a long wooden toothpick inserted in center comes out clean and sides of bread pull away from pan, shielding with aluminum foil during last 15 minutes to prevent excessive browning, if necessary. Cool bread in pans on wire racks 10 minutes. Remove from pans to wire racks. Let cool 30 minutes.

1 cup whole wheat flour (I used whole spelt flour)
1/2 cup coarse ground cornmeal
1/2 cup oat flour
1/4 cup oats, large flake
2 1/2 teaspoons baking powder
1/2 teaspoon pumpkin pie spice
1 pinch salt
1 cup banana, peeled and melted in the microwave (about 4 minutes at full power in my microwave)
1/4 cup almond butter (I made my own from roasted almonds)
1 large egg, whisked at room temperature
1 cup soymilk or 1 cup other non-dairy milk substitute
1/4 teaspoon almond extract
1/4 cup sugar (optional)

Steps:

  • First melt your bananas in the microwave if you have not already done so. Set aside to cool to room temperature (this is important because otherwise your egg might curdle later on).
  • Then combine flour, cornmeal, oat flour, oats, baking powder, pumpkin pie spice and salt in a large bowl.
  • In a second bowl combine bananas, almond butter, egg, milk and almond extract and mix well.
  • Combine dry and wet ingredients and mix until just combined. The dough should be rather thick, but not dry. If needed add a splash more milk or two.
  • Pour batter into a prepared loaf pan and bake in the pre-heated oven at 180 C/350 F for 35-40 minutes.
  • Remove to a wire rack to cool completely and enjoy!

1/3 c apple sauce
1/2 c granulated sugar
1/4 c honey
2 eggs
1 c all purpose flour
1 c wheat flour
1 tsp vanilla

1 c mashed bananas
1/2 c chopped dark chocolate optional

Steps:

  • 1. Spray a bread pan or 1 quart casserole with oil cooking spray. Crumple up aluminum foil and place on bottom of crock pot.
  • 2. Beat coconut oil, sugar,apple sauce and honey together until well blended.
  • 3. Add the eggs and beat until blended. Add bananas, and vanilla. Beat until smooth.
  • 4. Stir in flours. Baking soda, and salt. Add nuts and chocolate if desired and blend.
  • 5. Place batter in prepared baking dish or pan, and place in crock pot. Cover and cook on high 2-3 hours. Check on it with tooth pick inserted in to bread. You can also cook on low from 4-6 hours. Note: It took 2 hours and 20 minutes for my bread to cook in a bread pan,and in an oval crock pot

4 -6 bananas (dark)
4 cups whole wheat flour (pastry flour is fine)
1 1/2 cups ground flax seeds
1 teaspoon salt
2 eggs (or egg substitute)
1/2 cup oil
2 teaspoons baking soda
1/2 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350°F.
  • Spray 2 loaf pans with non-stick spray.
  • Mash bananas.
  • Combine sugar, oil and egg--mixing until creamy.
  • Blend in mashed bananas.
  • In a separate bowl, combine whole wheat flour, ground flax seed, salt, baking soda. (Add the nuts to the dry ingredients at this point). Combine wet and dry ingredients, but do not overmix.
  • Pour batter into loaf pans and bake approximately 1 hour-testing with a toothpick at the hour, and then as needed.
  • Note: Because the batter is dense you will need to watch the baking time to be sure it is adequate--don't only go by color, flax seed will add darkness.

WET INGREDIENTS:
1/2 c softened butter
1/2 c coconut oil
1/2 c dark brown sugar
1/2 c coconut sugar
1 c stevia in the raw
6 lg or 8 small very ripe bananas
1/2 c almond milk
1/2 c greek yogurt
2 tsp vanilla
DRY INGREDIENTS:
1 c coconut flour
2/3 c almond flour
2 c white whole wheat flour
1/3 c ground flax seeds
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
OPTIONAL ADD INS: CHOOSE ANY OR ALL.
1 1/2 c chopped pecans
1 1/2 c dark chocolate chips
1 c raw unsweetened coconut

Steps:

  • 1. Preheat oven to 350 degrees. line a cookie sheet with 8 mini aluminum loaf pans. Spray with non stick spray (I use coconut flavored) Cream butter and coconut oil in large mixer bowl. Add sugars and beat for 1 minute. Add bananas (I throw them in whole and let the mixer mash them while running).Beat 1 minute more. Add in eggs 1 at a time while mixer is running. Beat 1 minute more. Mix together milk, yogurt, and vanilla in a measuring cup and set aside. Stir together all dry ingredients. Add them alternately with the milk/yogurt mixture. Fold in chosen add ins and spoon batter into loaf pans. Bake for 35-45 minutes until golden brown and they test done. Brush tops with butter or coconut oil while still hot from of the oven. Enjoy!
  • 2. Can be served plain or smeared with low fat cream cheese or Neufchatel cheese.
