Time 2h15m

Number Of Ingredients 4

1/2 cup water
5 Tablespoons cornstarch ((or arrowroot))
1 (13 ounce) can unsweetened coconut milk ((full-fat ONLY))
1/4 cup sugar ((you can use more to taste if you like it sweet))

Steps:

  • Combine cornstarch and water in a small bowl. Stir until cornstarch is dissolved then set aside.
  • In a medium-sized sauce pan over medium heat, combine coconut milk and sugar.
  • Whisk constantly until mixture begins to simmer.
  • While continuing to whisk, SLOWLY pour in the water/cornstarch mixture until it thickens.
  • Reduce heat to low and continue to whisk until you have a thick, pudding-like consistency (this is important, it needs to be thickened while it is heating or it won't set up).
  • Pour into a greased 8"x8" baking dish* or square containers (I actually like to use my smaller glass Tupperware containers becasue the sides are more straight, making for more consistent squares).
  • Allow to cool to room temperature (about 10-15 minutes) then cover and refrigerate for 2+ hours.
  • When ready to serve, cut into 2" squares and serve cold.
  • *Note: If serving as a custard or pudding, pour into individual serving ramekins or bowls and chill.

Tips:

  • To achieve the authentic Hawaiian haupia texture, it's crucial to use fresh coconut milk. Canned coconut milk tends to be thicker and may not yield the desired consistency.
  • When selecting cornstarch, opt for a high-quality brand to ensure a smooth and lump-free mixture. Cheap brands may contain impurities that can affect the final texture of the haupia.
  • To prevent the haupia from curdling, it's essential to temper the eggs by slowly whisking the hot coconut milk mixture into them. This gradual process prevents the eggs from cooking too quickly and scrambling.
  • For a richer haupia, consider using full-fat coconut milk. This will result in a creamier and more decadent dessert.
  • To achieve a smooth and silky haupia, strain the mixture through a fine-mesh sieve before pouring it into the baking dish. This step removes any lumps or impurities that may have formed during mixing.
  • To ensure even cooking, place the baking dish in a larger pan filled with water. This creates a gentle steam bath that helps the haupia cook evenly throughout.
  • For a perfectly set haupia, chill it in the refrigerator for at least 4 hours, or overnight if possible. This allows the dessert to fully set and develop its characteristic texture.

Conclusion:

Haupia, a traditional Hawaiian coconut dessert, captivates taste buds with its creamy, rich, and subtly sweet flavor. Its versatility makes it a delightful addition to various occasions, from everyday treats to special celebrations. With careful attention to ingredients and techniques, home cooks can recreate this authentic Hawaiian delicacy in their own kitchens. Whether served as a standalone dessert or incorporated into other culinary creations, haupia offers a taste of the islands that is sure to leave a lasting impression.
