Steps:
- Preheat oven to 350 degrees F. Lightly spray a 9x13 pan with nonstick cooking spray; set aside.
- Melt butter in a very large skillet or Dutch over medium heat (something that can fit all ingredients). Whisk in flour then cook, while stirring for 2 minutes. Reduce heat to low then gradually whisk in milk and 1 ½ cups chicken broth. Whisk cornstarch with remaining chicken broth and add to skillet followed by Dijon, Worcestershire sauce, chicken bouillon and all spices/seasonings.
- Bring sauce to a simmer, whisking constantly, until thickened. Remove from heat and whisk in cheddar until melted followed by Gruyere cheese until melted. Whisk in sour cream until blended. Stir in defrosted hash browns until completely combined.
- Transfer hash browns to prepared baking pan and spread into an even layer. Evenly top with 1 cup shredded cheddar. Combine Ritz with melted butter and stir with a spatula until evenly coated. Sprinkle evenly over cheese.
- Cover casserole with foil and bake at 350 degrees for 40 minutes, uncover and bake an additional 15 minutes or until hot and bubbly and cheese is melted. Turn oven to broil (without moving pan) and broil until topping is golden, 1-2 minutes, watching closely it doesn't burn.
ONION-GARLIC HASH BROWNS
Quick to assemble, this is a simple recipe I've cooked many times. Stir in hot sauce if you like a bit of heat. I also like to top the finished dish with a sprinkling of shredded cheddar cheese. -Cindi Hayward-Boger, Ardmore, Alabama

CRISPY HASH BROWNS WITH SMOKY SAUCE
Steps:
- Smoky Sauce: In a medium mixing bowl combine the sour cream, parsley, paprika, vinegar and garlic. Mix until well blended, and then taste to check the seasoning. Season with salt and pepper.
- For the hash browns: Grate the potatoes using the large holes of a box grater. Place the grated potatoes on a clean dish towel and squeeze out the excess water.
- In a large mixing bowl combine the grated potatoes, onions, parsley, oregano, salt and pepper, and give it a good stir.
- Heat the oil in a large nonstick saute pan over medium heat. Using a 1/4 cup measuring cup, scoop out the potatoes and place in the hot pan. Fill the pan with 4 or 5 potato scoops, making sure not to overcrowd the pan. Using a spatula, flatten out the potato portions. Cook until golden brown, about 3 minutes. Flip and continue to cook on the other side until golden brown and crispy, about 3 minutes. Drain the hash browns on paper towels, sprinkle with salt, and repeat the process for the remaining potatoes. Serve with the smoky sauce on the side.

Steps:
- Heat one inch of salted water to boiling in a 3 quart saucepan.
- Add potatoes and cover.
- Heat to boiling and reduce heat.
- Simmer for 10 minutes or until fork tender.
- Drain and cool.
- Shred potatoes and mix with onion, parsley and garlic.
- Over medium heat, fry 2 tbl of the butter in a 10 inch skillet until melted.
- Spread potato mixture evenly in skillet and cook for about 7 minutes or until bottom is brown.
- Place a large plate over skillet and invert potato patty onto plate.
- Melt remaining 2 tbl butter in saucepan and slide potato patty, cooked side up, into skillet.
- Cook for another 7 minutes or until bottom is brown and crispy.
- Sprinkle with cheese and allow to melt before serving.
Tips:
- For crispy hash browns, use a large skillet and cook them in a single layer. Don't overcrowd the pan, or the hash browns will steam instead of fry.
- Use a well-seasoned cast iron skillet or a non-stick skillet for the best results. A well-seasoned cast iron skillet will give the hash browns a nice crispy crust, while a non-stick skillet will prevent them from sticking.
- Grate the potatoes using the large holes of a box grater. This will help to create long, thin strands of potato that will cook evenly.
- Rinse the grated potatoes under cold water and then drain them thoroughly. This will help to remove the starch from the potatoes, which will prevent them from sticking together.
- Season the hash browns with salt, pepper, and garlic powder before cooking. You can also add other seasonings, such as onion powder, paprika, or chili powder, to taste.
- Cook the hash browns over medium-high heat until they are golden brown and crispy. Be sure to stir them frequently to prevent them from burning.
- Serve the hash browns immediately with your favorite toppings. Some popular toppings include eggs, bacon, sausage, cheese, and avocado.
