1 lb hot ground pork sausage
30 ounces frozen hash browns
1 1/2 teaspoons salt, divided
1/2 teaspoon pepper
1 cup shredded cheddar cheese
6 large eggs
2 cups milk

Steps:

  • Cook sausages in a large skillet over medium-high heat, stirring until sausage crumbles and is no longer pink (there is where I added bell peppers and onions).
  • Prepare hashbrowns according to package directions, using 1/2 teaspoon salt and pepper.
  • Stir together hash browns, sausage, and cheese. Pour into a lightly greased 13x9 inch baking dish.
  • Whisk together eggs, milk, and remaining teaspoon salt. Pour evenly over potato mixture.
  • Bake at 350 for 35 to 40 minutes.

I made this up using a couple of different recipes and wanted to post this so I don't forget what I did!! You can make this the day before so it's perfect for holiday brunches. (I use the southwestern style for a spicy flavor) I may even try it southwestern style and post that separately. Let me know what you think!!

2 tablespoons canola oil
1 (20 ounce) package simply potatoes brand shredded hash browns
2 cups shredded swiss cheese
10 large eggs, slightly beaten
1 medium onion, diced
1 teaspoon minced garlic
4 ounces mushrooms, cleaned and sliced
1/2 cup milk
1/2 lb asparagus, washed, cut and blanched slightly
1 -2 small roma tomato, cleaned, seeds removed, diced
1/2 teaspoon pepper
1 dash nutmeg
8 -12 drops hot pepper sauce

Steps:

  • Add canola oil to bottom of skillet; heat to medium-high; add hasbrowns, onion and garlic. Spread them out and fry without disturbing for about 5 minutes, then turn them and fry for another 5 minutes until brown.
  • In a lightly sprayed 9 x 13 baking dish, spread hashbrowns on the bottom. Then spread the mushrooms, asparagus, roma tomatoes and 3/4 of the swiss cheese over the hashbrowns.
  • Beat eggs, milk, pepper, nutmeg and hot pepper sauce together and pour over everything. Press evenly down with edge of spoon or clean fingertips making sure all is coated. Top with remaining cheese.
  • At this point cover with foil and refrigerate till morning if making the day before.
  • Bake at 450 for 8 minutes; reduce oven temperature to 350 and continue baking for an additional 12 - 15 minutes.

This is an awesome breakfast casserole that is prepared ahead. It is easy and different. I found it in the December 2003 Southern Living magazine. We have had it for Christmas morning breakfast two years running. It's a hit at our house!

1 lb ground sausage ("hot" or "sage" flavored)
1/4 cup chopped onion
2 1/2 cups frozen cubed hash brown potatoes
5 large eggs, lightly beaten
8 ounces shredded sharp cheddar cheese (2 cups)
1 3/4 cups milk
1 cup baking mix
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook sausage and onion in large frying pan over medium-high heat for 5 minutes or until meat crumbles.
  • Stir in hash browns, and cook for 5 to 7 minutes or until sausage is no longer pink and hash browns are lightly browned.
  • Drain mixture well on paper towels.
  • Spoon mixture into a lightly greased 13 x 9-inch baking dish.
  • A stoneware baking dish works really well.
  • Stir together the lightly beaten eggs, shredded cheese, milk, baking mix, salt and pepper.
  • Pour evenly over sausage/hashbrown mixture.
  • Stir well.
  • Cover and chill for 8 hours.
  • Bake covered with foil at 350 degrees for 45 minutes.
  • Uncover and bake 10 to 15 more minutes or until a wooden pick inserted in the middle comes out clean.

  • You can also keep the casserole warm until you are ready to eat by covering it with foil and putting it in a 200 degree oven.
