Categories     side-dish

Time 35m

Yield 6 servings

Number Of Ingredients 6

1/2 cup whole hazelnuts
Kosher salt and freshly ground black pepper
1 1/2 pounds French string beans (haricots verts), stem ends removed
1 tablespoon unsalted butter
Good olive oil
1/4 cup minced fresh dill

Steps:

  • Place the hazelnuts in a large (12-inch) saute pan set over medium heat. Cook for 5 to 10 minutes, rolling them around occasionally, until they are heated through. Transfer the nuts to a clean kitchen towel, fold the towel over, and roll them around until some of the skins fall off. (Don't worry if they don?t all fall off.) Roughly chop the hazelnuts and set aside. Wipe out the pan with a kitchen towel.
  • Meanwhile, fill a large pot with 4 quarts water, add 1 tablespoon salt, and bring to a boil. Plunge the string beans into the water and cook for 5 minutes, until just tender. Drain immediately, plunge into a large bowl of ice water, and set aside.
  • When ready to serve, heat the butter and 1 tablespoon olive oil in the large saute pan over medium-high heat. Add the string beans, 2 teaspoons salt, and 1 teaspoon pepper and cook for 3 minutes, stirring with tongs, until heated through. Off the heat, stir in the dill and hazelnuts and taste for seasonings. Serve hot.

HARICOTS VERTS IN PLUM TOMATOES

Haricots Verts in Plum Tomatoes image

This dish looks impressive but it's very easy to prepare, so it's great for a dinner party! This is a great recipe for those of you who grow your own tomatoes and green beans. It makes more dressing than you'll need for the tomato/green bean combo....I use the extra dressing the next night on our salad.

HARICOTS VERTS

Haricots Verts image

Pair Haricots Verts-a classic side dish-with Sauteed Sole with Lemon.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Number Of Ingredients 5

Coarse salt, to taste
8 ounces haricots verts
2 tablespoons extra-virgin olive oil
Freshly ground pepper, to taste
1 bunch chives, for bundling (optional)

Steps:

  • Bring a pot of salted water to a boil. Add haricots verts, and cook until bright green and just tender, 3 to 5 minutes. Drain, and pat dry. Transfer to a serving bowl.
  • Toss with oil, salt, and pepper. Tie into bundles using chives.
  • Lay a chive on a work surface. Arrange 4 to 10 haricots verts in a small pile on top of chive. Carefully tie chive around bundle. Trim ends of chive if desired.

Tips:

  • When choosing plum tomatoes, look for firm, ripe tomatoes with a deep red color. Avoid tomatoes that are bruised or have blemishes.
  • To remove the skins from the tomatoes, score an X on the bottom of each tomato and place them in a bowl of boiling water for 30 seconds. Remove the tomatoes from the water and immediately transfer them to a bowl of ice water. The skins should slip off easily.
  • If you don't have any plum tomatoes, you can use regular tomatoes. Just peel and seed them before using.
  • Haricots verts can be found in the produce section of most grocery stores. Look for beans that are bright green and have no blemishes.
  • To prepare the haricots verts, trim the ends of the beans and then cut them into 2-inch pieces.
  • You can use any type of olive oil for this recipe. Extra virgin olive oil will give the dish a more flavorful taste, but regular olive oil will work just fine.
  • Fresh basil is the best choice for this recipe, but you can use dried basil if you don't have any fresh basil on hand.
  • Serve the haricots verts immediately or store them in the refrigerator for up to 3 days.

Conclusion:

This recipe for haricots verts in plum tomatoes is a delicious and easy side dish that can be served with a variety of main courses. The tomatoes and basil add a bright and flavorful taste to the beans, and the olive oil helps to bring all of the flavors together. This dish is sure to be a hit at your next dinner party or potluck.
