1 egg
¼ cup bread crumbs
⅛ teaspoon ground black pepper
½ teaspoon seasoned salt
½ teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon Worcestershire sauce
1 tablespoon vegetable oil
1 cup thinly sliced onion
2 tablespoons all-purpose flour
1 cup beef broth
1 tablespoon cooking sherry
½ teaspoon seasoned salt

Steps:

  • In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.
  • Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.
  • Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry. 1 lb ground beef
1/4 cup onion, chopped
1/8 cup green pepper, chopped
1 1/4 teaspoons salt
1/2 teaspoon pepper
1/2 cup evaporated milk
1/2 teaspoon Kitchen Bouquet
2 drops liquid smoke
1/4 cup butter
1/2 cup flour
1/2 teaspoon pepper
1/4 cup of leftover dredging flour
2 cups beef broth
1/4 teaspoon Worcestershire sauce
1 tablespoon beef base (optional)

Steps:

  • Combine ground beef, onion, green pepper, salt and pepper.
  • In a measuring cup combine evaporated milk, Kitchen Bouquet and Liquid Smoke.
  • Add to hamburg mixture.
  • Form into 4 patties, they will be loose.
  • Dredge patties in flour, pepper mixture (save leftover mixture for gravy).
  • Saute in pan with melted butter until well browned, about 4 minutes.
  • Remove patties.
  • For gravy, add flour to pan drippings and cook over low heat for 3 minutes, making a roux.
  • Add beef broth, Worcestershire Sauce and beef base, if using.
  • Place patties in gravy, cover and simmer over med-low heat for 20 minutes, turning once.

1/2 cup evaporated milk

1/4 cup drippings or 1/4 cup butter
1/4 cup flour
2 cups water
3 teaspoons beef bouillon

Steps:

  • Mix ground beef, salt, pepper, onion powder, and milk.
  • Form into patties, they will be loose.
  • Mix flour with as much pepper as you like.
  • Dredge patties in flour mixture on both sides.
  • Place in hot buttered pan.
