As a soon-to-be newlywed and housewife, this recipe was given to me as a wedding shower gift. Talk about the gift that keeps on giving! This casserole is simple to make and you'll find most of the ingredients stashed away in you pantry. It makes a lot and you won't mind.......it's that good:)

1 lb hamburger (salt, pepper and garlic powder, to taste)
1 large yellow onion
2 (14 1/2 ounce) cans green beans, drained
2 (14 1/2 ounce) cans corn kernels, drained
1 (6 ounce) can sliced ripe olives, drained
2 (10 3/4 ounce) cans condensed tomato soup
8 large potatoes (milk, butter, salt and pepper as needed for mashed potatoes)
2 cups colby-monterey jack cheese

Steps:

  • ~ Peel and boil potatoes until ready to mash ~ Meanwhile, saute onions. ~ Brown and season hamburger and drain off grease ~ Drain all canned veggies then add to hamburger mixture ~ Add tomoatoe soup, stir and heat through ~ Strain potatoes and mash with with butter, salt and pepper as you would mashed potatoes ~ Place hamburger mixture evenly into a rectangular casserole dish ~ Spread mashed potatoes evenly on top and sprinkle with cheese ~ Bake uncovered at 350 for 30-40 minutes or until cheese is melted and filling is bubbly. Broil for 2 minutes to brown cheese ~ Watch carefully during this time so cheese doesn't burn ~.

There are instructions on what to do if you want biscuits on this. In the old days they did that a lot. Just use your own biscuit recipe if you want to add them. This is going to be bland. Mid Westerners like their food that way; add more spices if you like.

1 lb ground beef
1 onion, medium, chopped
3/4 salt
1/8 teaspoon pepper
1 (10 1/2 ounce) can tomato soup
1/2 lb green beans, cooked and drained
6 potatoes, cooked
1/2 cup milk, warm
1 egg
1/2 cup cheddar cheese, shredded

Steps:

  • Lightly brown ground beef and onions; drain fat.
  • Add salt, pepper, tomato soup, and green beans.
  • Pour into a greased 1-1/2 quart casserole.
  • Mash hot potatoes; add salt and pepper to taste.
  • Add warm milk and egg; mix.
  • Drop mashed potatoes in mounds on top of meat mixture; spread if desired.
  • Add shredded cheddar cheese on top, or mix into potatoes.
  • Bake for 30 minutes at 350 degrees Fahrenheit until hot and bubbly.
  • If adding biscuits, cook for 15 minutes at 350 degrees Fahrenheit; add biscuits on top; turn oven up to 425 degrees Fahrenheit; bake 15 or 20 more minutes until biscuits are golden.
