1 fully cooked bone-in ham (6 to 7 pounds)
2 cups apple cider
1 cup honey
1/2 cup cider vinegar
1/4 cup Dijon mustard
1 tablespoon butter
2 teaspoons chili powder
1/2 teaspoon apple pie spice

Steps:

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Cover and bake at 325° for 2 hours., Meanwhile, in a large saucepan, combine the cider, honey, vinegar and mustard; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring frequently. Stir in the butter, chili powder and apple pie spice. Set aside 1 cup for serving. , Cook the remaining sauce until thickened; spoon over ham. Bake, uncovered, until a thermometer reads 140°, 30-35 minutes longer. Warm reserved sauce; serve with ham

1 to 2 lb ham steak
1 c apple cider
1/4 c brown sugar, lightly packed
1/4 c dijon mustard
1/4 c honey
1/2 tsp liquid smoke flavoring

Steps:

  • 1. Place ham steak in an ungreased 13 by 9 inch baking pan; set aside. Mix remaining ingredients together and whisk together. Then pour over ham steak. Bake, uncovered, at 350 degrees for 30 minutes, basting often. I cooked mine in an electric skillet. I think I might increase the amount of liquid smoke next time to 3/4 teaspoon.

3/4 cup water

  • In a large frying pan, heat butter over medium heat until hot.
  • Add ham steak, and heat for 4 to 5 minutes on the first side; flip and heat for 2 to 3 minutes on second side.

1 ounce butter
1 ounce plain flour
1 1/4 cups dry cider
1 1/4 cups chicken stock
2/3 cup heavy cream
salt & freshly ground black pepper
12 ounces pasta
8 ounces ham
3 red apples
1 ounce butter
1 ounce brown sugar
2 bell peppers (sliced) (optional)
2 tablespoons parsley, chopped
2 ounces sharp cheddar cheese, grated

Steps:

  • To cook the sauce: heat the butter in a saucepan and add the flour. Cook for 2 minutes over a medium heat; do not allow it to colour.
  • Remove from the heat. Slowly begin to add the stock and cider. Stir between each addition to ensure a smooth sauce.
  • When half the liquid is added, return the pan to the heat and slowly bring to the boil. As it begins to thicken add the rest of the liquid. Allow to boil for at least 2 minutes, taste and season.
  • Make the pasta: bring a pan of water to the boil. Cook the pasta for about 12 minutes or until al dente.
  • Slice the ham into finger-length slices and set aside.
  • Core and cut the apples into wedges. Melt the butter in a pan and add the brown sugar, allow it to almost caramelize and fry the apple wedges.
  • Drain the pasta and add to the sauce, add the ham and apples, and peppers. Season with salt and pepper.
  • Reheat thoroughly and serve.
  • If you do need to keep this dish hot for a while add a little more stock or water. Mix in most of the apples and put in an ovenproof dish, cover with tin foil and place into an oven at 275°F.

2 Tbsp olive oil, light
2 lb ham steaks
1 1/2 c apple cider
1/2 c apple wine
1/2 c sliced mushrooms
1/2 c brown suger,dark
1 c chopped dried apples
1/2 tsp rubbed sage
1/4 tsp ground cinnamon
1 1/2 Tbsp dijon mustard

Steps:

  • 1. I use a cast iron skillet for this. But any heave duty skillet will work.. Heat oil in a heavy skillet over high heat. Brown ham steak with mushrooms on each side for 2-3 minutes.Remove ham steaks and mushrooms and keep warm on a plater.
  • 2. Combine cider,brown sugar,apples,sages,cinnamon,and apple wine into skillet Bring to a rapid boil,then cook till reduced by abought 1/3. Whisk in mustard reduce heat to simmer.
  • 3. Return ham and mushrooms to the pan. Cover and cook over low heat for 10 to 15 minutes..Put meat on a platter..Raise heat to high whisk till sauce becomes like a syrup and poor over ham steak...
