HAM, NOODLE AND SWISS CHEESE CASSEROLE
Trying to use up Easter Ham I threw this together using what I had in the pantry and fridge! Amounts are approximate, feel free to add more or less of any ingredient! Edited to change the size bag of noodles. I think it was an 8 ounce bag not 16 ounce!

Steps:
- Preheat oven to 325 degrees.
- Prepare egg noodles in a large Dutch oven, boiling as described on package. Drain and return to the Dutch oven.
- While the noodles are boiling, melt butter in skillet over medium to medium high heat. Stir in flour until thickened a bit. Slowly add half and half and chicken broth, stirring to prevent lumps. Cut heat up a bit if needed. Slowly add Swiss cheese, dry mustard and salt and pepper, stirring constantly.
- When the sauce is medium thickness, cut heat down to low.
- In the large Dutch oven containing the drained noodles, add the frozen peas, ham and the sauce. Mix well and pour into rectangular baking dish approximately 9 by 13.
- Cover with French Fried onions.
- Bake for 20 minutes.
Tips:
- Use a variety of cheeses. This recipe calls for Swiss cheese, but you can also use mozzarella, cheddar, or Gruyère. Using a blend of cheeses will give your casserole a more complex flavor.
- Cook the noodles al dente. This means that they should be cooked until they are tender, but still have a slight bite to them. Overcooked noodles will become mushy and ruin the texture of your casserole.
- Don't overcook the ham. Ham is already cooked, so you just need to heat it through. Overcooking it will make it tough and dry.
- Use a casserole dish that is large enough to hold all of the ingredients. If you use a dish that is too small, the casserole will be too thick and the noodles will not cook evenly.
- Bake the casserole until it is golden brown and bubbly. This usually takes about 30 minutes. You can also cover the casserole with foil and bake it for 20 minutes, then uncover it and bake it for an additional 10 minutes.
Conclusion:
This ham noodle and Swiss cheese casserole is a delicious and easy meal that is perfect for a weeknight dinner. It is also a great way to use up leftover ham. The casserole is made with simple ingredients and can be easily customized to your liking. So next time you are looking for a quick and easy meal, give this recipe a try.
