BAREFOOT CONTESSA'S BAKED HAM

Barefoot Contessa's Baked Ham image

Perfect for Easter or anytime you are baking a ham, this ham is delicious. I am not a huge fan of chutney but together with the other ingredients, it works well. I use a spiral ham as called for and it doesn't dry out at all.

1 (2 sheet) package frozen puff pastry, defrosted (recommend Pepperidge Farm)
2 tablespoons Dijon mustard
1/4 lb black forest ham, sliced
1/2 lb swiss gruyere cheese, sliced
1 egg, beaten with
1 tablespoon water, for egg wash

Categories     appetizer

Time 40m

Yield 40 puffs

Number Of Ingredients 10

1 cup milk
1/4-pound (1 stick) unsalted butter
1 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Pinch nutmeg
1 cup all-purpose flour
4 extra-large eggs
1/2 cup grated Gruyere, plus extra for sprinkling
1/4 cup freshly grated Parmesan
1 egg beaten with 1 teaspoon water, for egg wash

Steps:

  • Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment paper.
  • In a saucepan, heat the milk, butter, salt, pepper, and nutmeg over medium heat, until scalded. Add the flour all at once and beat it vigorously with a wooden spoon until the mixture comes together. Cook, stirring constantly, over low heat for 2 minutes. The flour will begin to coat the bottom of the pan. Dump the hot mixture into the bowl of a food processor fitted with the steel blade. Immediately add the eggs, Gruyere, and Parmesan and pulse until the eggs are incorporated and the dough is smooth and thick.
  • Spoon the mixture into a pastry bag fitted with a large plain round tip. Pipe in mounds 1 1/4 inches wide and 3/4-inch high onto the baking sheets. With a wet finger, lightly press down the swirl at the top of each puff. (You can also use 2 spoons to scoop out the mixture and shape the puffs with damp fingers.) Brush the top of each puff lightly with egg wash and sprinkle with a pinch of Gruyere. Bake for 15 minutes, or until golden brown outside but still soft inside.

HAM & CHEESE IN PUFF PASTRY (BAREFOOT CONTESSA)

Number Of Ingredients 7

1 package (2 sheets) frozen puff pastry,
defrosted
2 tablespoons Dijon mustard
1/4 pound black forest ham, sliced
1/2 pound Swiss Gruyere cheese, sliced
1 egg, beaten with 1 tablespoon water, for egg
wash

Steps:

  • Preheat the oven to 450 degrees F. Place a piece of parchment paper on a sheet pan. Lay 1 sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches. Place it on a sheet pan and brush the center with the mustard, leaving a 1-inch border around the edge. Place a layer first of ham and then cheese, also leaving a 1-inch border. Brush the border with the egg wash. Place the second sheet of puff pastry on the floured board and roll it out to 10 by 12inches. Place the second sheet on top of the filled pastry, lining up the edges. Cut the edges straight with a small, sharp knife and press together lightly. Brush the top with egg wash and cut a few slits in the top to allow steam to escape. Bake for 20 to 25 minutes, until puffed and golden brown. Allow to cool for a few minutes and serve hot or warm.

Tips:

  • For the best results, use high-quality ingredients. Look for puff pastry that is made with real butter, and use a good quality ham and cheese. The better the ingredients, the better the final product will be.
  • Make sure the puff pastry is cold before you start working with it. This will help to prevent it from becoming sticky and difficult to work with.
  • Roll out the puff pastry thinly, but not too thinly. You want it to be about 1/8-inch thick. If it is too thin, it will be difficult to fold and will tear easily.
  • Brush the puff pastry with egg wash before baking. This will help it to brown nicely and give it a golden color.
  • Bake the ham and cheese in puff pastry until it is golden brown and the cheese is melted and bubbly. This will take about 20-25 minutes.

Conclusion:

Ham and cheese in puff pastry is a delicious and easy-to-make dish that is perfect for any occasion. Whether you are serving it for breakfast, lunch, or dinner, this recipe is sure to be a hit. The combination of flaky puff pastry, savory ham, and melted cheese is irresistible. So next time you are looking for a quick and easy meal, give this recipe a try. You won't be disappointed.
