Provided by Jessie Shafer

Time 55m

Number Of Ingredients 13

¼ cup unsalted butter or coconut oil
1 yellow onion, diced
2 cups frozen broccoli florets (cut into small pieces, if the florets are large)
⅓ cup gluten-free flour blend or all-purpose flour*
3 cups dairy or unsweetened non-dairy milk
1 teaspoon fine salt
½ teaspoon dried thyme
½ teaspoon garlic powder
¼ teaspoon black pepper
6 cups (1 lb) frozen shredded potatoes (frozen hash browns)
2 cups cooked, diced ham
1½ cups shredded sharp cheddar cheese, divided
Sliced green onions, chives, or fresh parsley (for garnish)

Steps:

  • Preheat the oven to 400 degrees. Mist a 9×13-inch (or other 3-quart) baking dish with nonstick cooking spray.

SCALLOPED POTATOES AND HAM

Scalloped Potatoes and Ham image

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 1h35m

Yield 12 servings

Number Of Ingredients 10

4 tablespoons (1/2 stick) butter, plus extra for greasing dish
1/2 yellow onion, diced
1/3 cup all-purpose flour
1 1/2 cups half-and-half
1 1/2 cups milk
Freshly ground black pepper
2 pounds russet potatoes, washed thoroughly
3 cups diced cooked ham
2 cups grated Monterey Jack cheese
Chopped fresh parsley, for sprinkling, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the butter and onions to a large skillet over medium heat and saute until starting to soften, 3 to 4 minutes. Sprinkle the flour over the onions and whisk them together. Continue cooking the onion/flour mixture until golden brown, about 2 minutes. Stir in the half-and-half and milk and whisk around, allowing the mixture to thicken; this will take 3 to 4 minutes. Add some pepper, stir the sauce, reduce the heat and keep warm.
  • Slice the potatoes really thin using a mandolin or a really sharp knife, the thinner the better. Generously butter a 2-quart baking dish, then add half the sliced potatoes and half the diced ham. Sprinkle on half the cheese then pour on half the sauce from the skillet. Repeat with the rest of the ingredients, ending with a layer of cheese and sauce. Sprinkle extra pepper on top.
  • Cover the dish with foil and bake it for 40 minutes, then remove the foil and bake until the cheese is golden brown and the sauce is bubbling, an additional 20 to 30 minutes. Sprinkle with chopped parsley if desired and serve it up.

Tips:

  • Use a variety of cheeses. This recipe calls for a combination of cheddar and Parmesan, but you can use any type of cheese that you like. Some other good options include Gruyère, Swiss, and Fontina.
  • Don't overcook the potatoes. The potatoes should be tender, but they should still have a little bit of bite to them. If you overcook them, they will become mushy.
  • Use fresh broccoli. Fresh broccoli will have a better flavor and texture than frozen broccoli.
  • Don't skimp on the ham. The ham adds a lot of flavor to this dish, so don't be afraid to use a generous amount.
  • Serve immediately. This dish is best served immediately after it is made. The potatoes will start to lose their crispiness if you let it sit for too long.

Conclusion:

Ham and broccoli scalloped potatoes are a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of ham, broccoli, and potatoes is hearty and satisfying, and the cheesy sauce is rich and flavorful. This dish is sure to be a hit with your family and friends.
