Tips:

  • Choose fresh, firm halibut fillets. Look for fillets that are opaque in color and have a mild, briny smell. Avoid fillets that are discolored, slimy, or have a strong fishy odor.
  • Pat the halibut fillets dry before cooking. This will help to prevent the fish from steaming rather than searing.
  • Season the halibut fillets generously with salt and pepper. This will help to enhance the flavor of the fish.
  • Cook the halibut fillets over medium-high heat. This will help to create a nice sear on the outside of the fish while keeping the inside moist and flaky.
  • Serve the halibut fillets immediately with your favorite sides. Some popular sides include roasted vegetables, mashed potatoes, or rice.
  • To make the zucchini salsa verde, simply combine all of the ingredients in a food processor or blender and pulse until smooth. You can adjust the consistency of the salsa verde by adding more or less olive oil.
  • The zucchini salsa verde can be stored in the refrigerator for up to 3 days. It is a great way to add a pop of flavor to grilled or roasted vegetables, fish, or chicken.
