ROASTED HALIBUT WITH SAFFRON-FENNEL BUTTER

Roasted Halibut with Saffron-Fennel Butter image

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

1 stick unsalted butter, at room temperature
1/2 teaspoon lightly crumbled saffron threads
1/4 teaspoon fennel seeds
Kosher salt and freshly ground pepper
1 small bulb fennel, trimmed, cored and thinly sliced, plus fennel fronds for topping
1 clove garlic, finely grated
Juice of 1 lemon
2 tablespoons extra-virgin olive oil
2 cups yellow cherry or grape tomatoes, halved
4 8-ounce center-cut halibut fillets (skin-on)

Steps:

  • Combine 1 tablespoon butter and the saffron in a small microwave-safe bowl and microwave until the butter melts, about 1 minute. Let cool 5 minutes. Place the remaining butter and the fennel seeds in a food processor and pulse until smooth. Add the melted saffron butter, 1 teaspoon salt and a few grinds of pepper and continue pulsing until the butter is bright yellow. Transfer to a piece of plastic wrap and form into a 4-inch log; freeze until firm, about 20 minutes. (The saffron butter will keep in the refrigerator for up to 2 weeks.)
  • Meanwhile, preheat the oven to 425 degrees F. Toss the sliced fennel, garlic, the juice of 1/2 lemon, 1 tablespoon olive oil and 2 tablespoons water in a 9-by-13-inch baking dish. Sprinkle with 2 tablespoons water and season with 1/2 teaspoon salt and a few grinds of pepper. Cover with foil and bake until the fennel is tender, about 20 minutes.
  • Toss the tomatoes with the remaining 1 tablespoon olive oil and season with salt and pepper. Scatter the tomatoes over the fennel. Set the halibut on top of the vegetables; drizzle with the juice of the remaining 1/2 lemon and season with salt and pepper.
  • Bake, uncovered, until the halibut is firm and no longer translucent, about 12 minutes; remove from the oven and top each piece with a thin slice of saffron butter. Return the halibut to the oven and bake until the butter just begins to melt, about 2 more minutes. Serve with fennel fronds.

GRILLED HALIBUT WITH FENNEL, RED ONIONS AND OREGANO

Grilled Halibut with Fennel, Red Onions and Oregano image

This dish is fast, healthy and combines a Sicilian favorite combo of mine: oranges, red onions and oregano. Fennel is a winter favorite, but in most markets it is available year round and in my family we used it as a digestive during big meals throughout the year.

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 10

4 (6-ounce) halibut filets
Extra-virgin olive oil, 2 tablespoons plus some for drizzling
Salt and pepper
Crusty bread, cut into thick slices
1 orange
1 bulb fennel, quartered, core removed, thinly sliced
1 red onion, thinly sliced
2 tablespoons red wine vinegar, a couple of splashes
Handful flat-leaf parsley, chopped
1 tablespoon chopped fresh oregano leaves, 2 sprigs

Steps:

  • Heat a grill pan or outdoor grill over high heat.
  • Drizzle extra-virgin olive oil over the fish and season with salt and pepper. Grill 4 minutes on each side until fish is firm but not tough and cooked through. Grill bread alongside or char under broiler then dress with extra-virgin olive oil, salt and pepper as well.
  • Preheat a skillet over medium-high heat.
  • While fish cooks, peel the orange as you would a melon: cut off ends, stand it upright and cut off skin and pith in thin strips from top to bottom. Cut orange across into thin slices.
  • To preheated skillet add extra-virgin olive oil, 2 turns of the pan, the fennel and onions, season with salt and pepper and cook 3 to 5 minutes until seared and beginning to soften. Add vinegar to the pan and give it a shake. Remove from heat and toss in the oranges, the parsley and oregano. Adjust seasoning and serve salad on dinner plates topped with fish, and seasoned bread alongside.

HALIBUT WITH CARROTS, FENNEL, LEMON, AND GARLIC

Halibut with Carrots, Fennel, Lemon, and Garlic image

Categories     Fish     Garlic     Bake     Passover     Low/No Sugar     Lemon     Halibut     Fennel     Carrot     Spring     Kosher     Bon Appétit

Yield Makes 8 servings

Number Of Ingredients 8

1 cup olive oil, divided
1 large fresh fennel bulb, halved, very thinly sliced, top fronds reserved
2 large lemons; 1 sliced very thin, 1 cut into 8 wedges
8 4-ounce halibut fillets
2 medium carrots, cut into matchstick-size strips
1 12-ounce container grape tomatoes or cherry tomatoes, halved
2 large bunches fresh thyme
2 garlic cloves, peeled

Steps:

  • Preheat oven to 450°F. Line large rimmed baking sheet with foil, leaving overhang as long as baking sheet. Brush foil with 1 tablespoon oil. Scatter sliced fennel in center of foil as bed for fish. Top fennel with lemon slices, then fish, spacing slightly apart. Sprinkle fish with salt and pepper. Sprinkle carrots over fish; arrange tomatoes around fish. Drizzle 3 tablespoons oil over fish and tomatoes. Top with 16 thyme sprigs. Cover fish with foil overhang and seal. Bake fish until just opaque in center, about 12 minutes.
  • Meanwhile, blend remaining 3/4 cup olive oil and garlic in blender until smooth. Season sauce to taste with salt and pepper.
  • Open foil packet. Drizzle all of sauce over fish and vegetables. Reseal foil. Let fish cool at room temperature 1 hour. Chill overnight.
  • Discard thyme sprigs. Using large spatula, transfer 1 fish fillet with fennel base to each of 8 plates. Divide tomatoes, carrots, and sauce among plates. Garnish fish with lemon wedges and fennel fronds.

Tips:

  • Selecting Fresh Halibut: Opt for halibut steaks or fillets that are firm to the touch, with a mild, briny aroma. Avoid any fish with a slimy texture or an overpowering fishy smell.
  • Marinating the Halibut: The lemon-herb marinade not only infuses the halibut with flavor but also helps tenderize it. Ensure the fish is fully coated in the marinade and let it rest for at least 30 minutes, or up to overnight.
  • Cooking the Halibut: Pan-searing the halibut fillets or steaks on medium-high heat creates a crispy exterior while maintaining a flaky, tender interior. Be careful not to overcrowd the pan, as this can result in uneven cooking.
  • Preparing the Fennel Salad: Use a mandoline or sharp knife to thinly slice the fennel bulb for a delicate texture. Combine it with arugula, parsley, and a tangy lemon vinaigrette for a refreshing and flavorful salad.
  • Plating and Serving: Arrange the pan-seared halibut on a bed of the fennel salad. Drizzle any remaining marinade or lemon vinaigrette over the fish and sprinkle with additional herbs for a visually appealing and delicious dish.

Conclusion:

This Halibut and Lemon-Fennel Salad offers a delightful combination of flavors and textures that will impress any seafood enthusiast. By following the tips and techniques outlined above, you can create a restaurant-quality meal in the comfort of your own home. The tender, flaky halibut pairs perfectly with the vibrant fennel salad, resulting in a balanced and satisfying dish.
