Mango-Habanero Salsa image

This sweet and spicy salsa combines mangoes, habaneros, fresh cilantro and lime.

Number Of Ingredients 9

1 garlic clove
Kosher salt
1/4 cup coarsely chopped fresh cilantro
2 tablespoons extra-virgin olive oil
2 ripe mangoes, peeled, pitted and diced (about 2 1/2 cups)
4 scallions, thinly sliced
1 habanero chile, stemmed, seeded, and finely chopped,
Juice of 2 limes
Tortilla chips, for serving

Steps:

  • Finely chop the garlic, sprinkle with 1 1/4 teaspoon salt, and mash into a coarse paste using flat side of a large knife. Mix the garlic paste with cilantro, oil, mango, scallions, habanero and lime juice. Set aside for at least 15 minutes to allow the flavors to meld. 3 medium ripe avocados
Salt and freshly cracked black pepper
2 to 3 limes, juiced
1/4 cup fresh cilantro leaves, minced
2 tablespoons minced red onion
1 clove garlic, grated
1 ripe mango, peeled and diced
1/2 to 1 small habanero (ribs and seeds removed unless you want it hot!), minced
1/2 to 1 small habanero (ribs and seeds removed unless you want it hot!), minced
1/4 red bell pepper, diced

Steps:

  • Scoop the avocado flesh into a bowl. Mash the avocados and season with salt, pepper and lime juice. Stir in the cilantro, onions, garlic, mango, habanero and red bell pepper. Taste and adjust the seasoning if necessary.

salt and pepper, to taste
1/2 cup mango chutney
1 habanero pepper, seeded and minced
1 ripe avocado, cut into a 1 inch dice
1/2 cup fresh pineapple, diced
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice
1 teaspoon ground cumin

Steps:

  • Preheat oven to 400°F Coat a shallow roasting pan with cooking spray.
  • Season pork with salt and pepper and place in pan. In a small bowl, mix the chutney with the habanero. Spoon mixture over pork.
  • Roast for 25 minutes, or until pork is just cooked through. Let stand for 5 minutes before slicing into 1/2 inch thick slices.
