GULF COAST GUACAMOLE DIP
An award winning dip that's festive and a big hit with avocado fans. Most feedback was based on the shrimp. It threw everyone for a loop and added an unexpected flavor and texture. Try substituting canned shredded crab meat if you're a crab lover. You can vary the ingredients to taste and based on how large the avocados are. My dip has never come out the same way twice, but always a big hit!

This is one of my dad's favorite recipes that he's handed down to my sisters and myself. It's a little different from traditional guacamole dip cause of the cottage cheese, but very delicious! Serve with chips or vegetables.

Steps:
- 1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.) 2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours. Keep the tomatoes separate until ready to serve. Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste. 3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready. 4 Just before serving, add the chopped tomato to the guacamole and mix. Variations For a very quick guacamole just take a 1/4 cup of salsa and mix it in with your mashed avocados. You don't need to have tomatoes in your guacamole. To extend a limited supply of avocados, add either sour cream or cottage cheese to your guacamole dip. Purists may be horrified, but so what? It tastes great. In fact, guacamole with a little cottage cheese added to it is my favorite.
Tips:
- Choose ripe avocados: Look for avocados that are dark green or almost black in color, and feel slightly soft when gently squeezed.
- Use fresh ingredients: The fresher the ingredients, the better the guacamole will taste. This means using ripe avocados, fresh lime juice, and chopped cilantro.
- Don't over-mash the avocados: Guacamole should have a chunky texture, so be careful not to over-mash the avocados. Use a fork or potato masher to gently mash the avocados until they are just combined.
- Add toppings: Guacamole is a versatile dish that can be customized to your liking. Try adding toppings like diced tomatoes, chopped onions, or crumbled queso fresco.
- Serve immediately: Guacamole is best served immediately after it is made. If you need to store it, cover it tightly with plastic wrap and refrigerate for up to 2 days.
Conclusion:
Guacamole is a delicious and healthy dip that is perfect for any occasion. It is easy to make and can be customized to your liking. With its creamy texture and fresh flavor, guacamole is sure to be a hit at your next party or gathering. So next time you are looking for a quick and easy snack or appetizer, give guacamole a try. You won't be disappointed!
