GRUYERE POTATOES

I really like the flavor imparted from the beef broth, instead of more dairy from cream or milk, as is usually found with scalloped potatoes.

BAKED TOMATO, GRUYèRE & POTATO GRATIN

Baked tomato, gruyère & potato gratin image

Layer up sliced potatoes and tomatoes with a cheesy, creamy sauce, then top with walnuts and breadcrumbs for a vegetarian bake

Provided by Sarah Cook

Categories     Dinner, Lunch, Main course, Supper

Time 1h40m

Number Of Ingredients 12

a few knobs of butter , plus extra for greasing
4-5 thyme sprigs
200g gruyère , grated
100g parmesan (or vegetarian alternative), finely grated
500ml pot double cream
300ml vegetable or chicken stock
1 ½kg large potatoes , thinly sliced (on a mandolin if you have one)
8 round shallots or 4 banana shallots, thinly sliced
3 fat garlic cloves , finely chopped
100g walnuts , chopped
650g mixed tomatoes , sliced
5 tbsp dried breadcrumbs

Steps:

  • Heat oven to 180C/160C fan/gas 4. Generously grease a large, deep, ovenproof dish. Strip the leaves from 3 of the thyme sprigs. Mix the gruyère with all but 2 tbsp of the grated parmesan, then mix the double cream with the stock.
  • Start layering up the sliced potatoes with sprinklings of the shallots, garlic, thyme leaves, cheese and most of the walnuts, plus plenty of seasoning. Drizzle a little of the cream mixture over each layer too. When you've layered in half of those ingredients, top with half of the tomatoes. Continue layering the rest of the ingredients, finishing with the last of the cream. Top with the remaining tomatoes, then sprinkle over the breadcrumbs, the remaining parmesan and walnuts, and enough thyme to look pretty. Add a few more knobs of butter, then cover with foil.
  • Bake the gratin for 1 hr 15 mins, then remove the foil and bake for a further 40 mins until golden and crispy on top, and a knife poked into the centre of the potatoes slides in easily. Leave to rest for 10-15 mins, then serve.

GRUYERE TWICE BAKED POTATOES

Gruyere twice baked potatoes image

Over the Thanksgiving holiday I tried gruyere cheese for the first time and fell in love. I had some left over so this is what I came up with.

Provided by Amanda Alias

Categories     Potatoes

Time 1h55m

Number Of Ingredients 9

4 baking potatoes
1 Tbsp chives (i used dried)
1/2 c gruyere cheese shredded
1/4 c gruyere cheese shredded
4 thick slices of bacon cubed
4 scallions chopped
1/3 c sour cream
salt and pepper to taste
3 Tbsp butter (cubed)

Steps:

  • 1. Poke hole around potatoes with a fork. Bake in the oven at 375° for 45 minutes to an hour. When you slightly press the sides they give and are soft, that's how I tell when they are done (do this with an oven mitt on, not your bare hands, ouch!)
  • 2. While potatoes bake, brown the bacon until it's the crispiness you love. Drain the fat. In mixing bowl add all other ingredients except the 1/4 cup gruyere cheese.
  • 3. With your hand covered in an oven mitt, hold the potato horizontal and remove the top skin with a knife. Set the "tops" aside and using small spoon, scoop out as much potato as you can without tearing the skin.
  • 4. Add the scooped out potato to the mixing bowl with everything else and stir to combine (make sure the butter gets melted.) Carefully use the mix to fill the potatoes back up (careful not to tear the skin.) This will make them overflow with stuffing and that's a good thing.
  • 5. Top potatoes and the potato tops with the remaining gruyere cheese. Put back in the oven and bake 30 - 45 minutes, until the cheese is lightly brown on top.
  • 6. Remove to plate or serving dish and top with those cute little cheese covered tops. I hope you enjoy, we sure did!

Tips:

  • Use high-quality ingredients. The better the quality of your ingredients, the better your Gruyère potato bake will taste. Look for fresh, organic potatoes, and a sharp, flavorful Gruyère cheese.
  • Don't overcook the potatoes. The potatoes should be tender but still hold their shape. Overcooked potatoes will be mushy and unpleasant.
  • Use a good quality baking dish. A heavy baking dish will help to distribute the heat evenly and prevent the potatoes from burning.
  • Don't be afraid to experiment. There are many different ways to make Gruyère potato bake. Feel free to add your favorite herbs, spices, or vegetables.

Conclusion:

Gruyère potato bake is a delicious and comforting dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. Whether you are a fan of classic comfort food or you are looking for something new and exciting, Gruyère potato bake is sure to please.
